This High-Protein Chia Pudding recipe is a healthy and delicious breakfast or snack option packed with protein and fiber. Combining chia seeds soaked in non-dairy milk with Greek-style yogurt, nuts, seeds, dates, and fresh blueberries creates a creamy, flavorful pudding that's both nutritious and easy to prepare. Perfect for those looking for a plant-forward, dairy-light, and naturally sweetened treat.

Ingredients

Chia Seed Base

  • 2/3 cups chia seeds (or basil seeds)
  • 2 cups nondairy milk

Add-Ins

  • 1 1/4 cup Greek style yogurt
  • 3 Medjool dates (or add date syrup to taste)
  • 1/4 cup pistachios (optional)
  • 1/3 cup pumpkin seeds
  • 1/3 cup hemp seeds

Flavorings and Fruit

  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1 cup frozen blueberries

Instructions

  1. Soak the chia seeds: In a large bowl or jar, stir the chia seeds into the nondairy milk. Let sit for 5 minutes, then stir again thoroughly to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until the mixture thickens to a pudding consistency.
  2. Prep the add-ins: On a cutting board, finely chop the Medjool dates, pistachios (if using), and pumpkin seeds to ensure even distribution and ease of eating.
  3. Combine ingredients: Stir the chopped dates, pistachios, and pumpkin seeds into the soaked chia seed mixture. Add the Greek style yogurt, hemp seeds, vanilla extract, cinnamon, and frozen blueberries. Mix everything well, adding more nondairy milk if needed to reach your desired pudding texture.
  4. Adjust sweetness and flavor: Taste the pudding and add additional sweetener such as more dates or date syrup, or extra vanilla extract to enhance the flavor as desired. Serve chilled for best results.

Notes

  • Soaking the chia seeds well ensures they fully absorb the liquid and achieve the right pudding texture.
  • Use Greek style yogurt to boost protein content; non-dairy yogurt can be substituted for vegan preference but will change protein slightly.
  • Pistachios are optional but add a nice crunch and extra healthy fats.
  • Frozen blueberries add freshness and antioxidants; substitute with any berries available.
  • Can be prepared the night before for a quick grab-and-go breakfast.
