Ingredients

Bread

  • 2 slices bread (gluten free if needed)

Avocado Mixture

  • ½ large avocado (use a whole avocado if yours isn't large)
  • 1 tsp apple cider vinegar
  • Sea salt & black pepper to taste

Chickpea Topping

  • ⅓ cup chickpeas (rinsed & drained)
  • Sea salt & black pepper to taste

Garnishes

  • Microgreens, herbs, homemade sauerkraut or radish slices to garnish

Instructions

  1. Toast Bread: Toast the slices of bread until golden and crisp to provide a sturdy base for the toppings.
  2. Prepare Avocado Mixture: While the bread is toasting, combine the flesh of half a large avocado with 1 teaspoon of apple cider vinegar in a small bowl. Mash with a fork or your hands until the mixture is almost smooth. Season it with sea salt and black pepper to your preference.
  3. Mash Chickpeas: In a separate bowl, mash the rinsed and drained chickpeas using your hands or a fork until flaky in texture. Season with sea salt and black pepper to taste to add flavor.
  4. Assemble Toast: Spread the avocado mixture evenly over each toast slice. Then top with the smashed chickpeas for a protein-rich layer.
  5. Garnish and Serve: Decorate the prepared avocado and chickpea toast with microgreens, herbs, homemade sauerkraut, or radish slices for freshness and added flavor. Serve immediately while the toast is still crisp.
