Ingredients

Donut Batter

  • 4 tablespoons salted butter
  • 1/3 cup maple syrup or honey
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 eggs, at room temperature
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips

Chocolate Glaze

  • 1 cup mini chocolate chips
  • 2 tablespoons avocado oil

Instructions

  1. Preheat and Grease: Preheat your oven to 350° F. Grease a 6-cup doughnut pan or a 12-cup muffin pan with melted butter to ensure the donuts come out easily after baking.
  2. Brown the Butter: Place 4 tablespoons of salted butter into a pot over medium heat. Let it cook for 2-3 minutes until it browns lightly and emits a toasted aroma. Remove from heat immediately to prevent burning.
  3. Mix Wet Ingredients: In a large mixing bowl, combine the browned butter, maple syrup or honey, plain Greek yogurt, eggs, and vanilla extract. Whisk thoroughly until the mixture is smooth and well incorporated.
  4. Add Dry Ingredients: Sift together the all purpose flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture, folding until just combined to avoid overmixing. Gently fold in the mini chocolate chips.
  5. Fill and Bake: Spoon the batter evenly into the prepared pan, filling each mold about halfway to two-thirds full. Bake for 10 to 12 minutes, or until the donuts are just set and a toothpick comes out clean. Remove from oven and let cool for 5 minutes before running a knife around edges and inverting the pan to release the donuts.
  6. Prepare the Chocolate Glaze: In a microwave-safe bowl, combine 1 cup mini chocolate chips and 2 tablespoons avocado oil. Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted.
  7. Glaze the Donuts: Dip or drizzle the cooled donuts into the chocolate glaze. Allow the glaze to set at room temperature or pop the donuts into the freezer for a few minutes to speed up the setting process.

Notes

  • Using browned butter adds a nutty and rich depth of flavor to the donuts.
  • You can substitute maple syrup with honey or agave nectar as preferred.
  • Ensure eggs are at room temperature for better batter mixing and texture.
  • Donuts can be stored in an airtight container at room temperature for up to 2 days, or refrigerated for up to a week.
  • Reheat donuts briefly in a microwave or oven to regain softness.
  • For a dairy-free version, replace Greek yogurt with coconut yogurt and use dairy-free butter.
