This homemade flatbread pizza recipe offers a simple and delicious way to enjoy fresh, handcrafted pizza with a soft yet slightly crispy crust. Made from basic pantry ingredients like flour, yeast, and olive oil, the dough is kneaded to perfection, allowed to rise, then topped with your favorite ingredients and baked in a hot oven. Ideal for a quick, customizable meal that's perfect for two servings.

Ingredients

Dough Ingredients

  • 1 teaspoon active dry or instant yeast
  • 1 teaspoon granulated sugar
  • 3/4 cup (180ml) warm water, between 100-110°F (38-43°C)
  • 2 cups (250g) all-purpose flour or bread flour, plus more for hands and surface
  • 1 Tablespoon (15ml) olive oil
  • 1 teaspoon salt
  • optional: 1 teaspoon garlic powder or 1 clove minced garlic
  • optional: 1 teaspoon Italian seasoning

Topping Ingredients

  • Your favorite pizza toppings (e.g., tomato sauce, cheese, vegetables, meats)
  • 2 teaspoons olive oil for brushing

Instructions

  1. Prepare the dough: In the bowl of a stand mixer, whisk together the yeast, sugar, and warm water. Cover loosely and let it sit for 5-10 minutes until foamy and frothy. If mixing by hand, use a large bowl and wooden spoon or silicone spatula.
  2. Mix dough ingredients: Add flour, 1 tablespoon olive oil, salt, and optional garlic/Italian seasoning. Mix with a dough hook attachment on low speed until combined, about 2 minutes. The dough should be thick, soft, and slightly sticky, pulling away from the bowl sides. Add more flour 1 tablespoon at a time if too sticky.
  3. Knead the dough: Knead with the dough hook attachment on the stand mixer for 6-8 minutes or knead by hand on a floured surface for the same time. If dough gets too sticky, sprinkle flour 1 teaspoon at a time. Dough should be soft and pass the windowpane test, indicating readiness.
  4. Let dough rise: Place dough in a greased bowl and cover with plastic wrap, foil, or kitchen towel. Let rest and rise at room temperature for 45 minutes until slightly risen. Alternatively, refrigerate covered for up to 2 days.
  5. Prepare toppings: While the dough rises, get your preferred toppings ready as desired.
  6. Preheat oven: Heat oven to 475°F (246°C).
  7. Shape the dough: Punch down dough to release air and divide into two portions. On a floured surface with floured hands, stretch or roll each piece to about 1/4 inch thickness. Transfer to a baking sheet lined with parchment or a pizza stone.
  8. Prepare flatbreads: Prick surface of each flatbread with fingers or fork holes. Brush each with 1 teaspoon olive oil. Add your favorite toppings.
  9. Bake the pizza: Bake for 15-20 minutes until crust is browned and toppings are cooked to your liking. Remove from oven.
  10. Serve and store: Slice and serve warm. Store leftovers covered in the refrigerator for up to 1 week.

Notes

  • This dough can be made ahead and refrigerated for up to 2 days after the first rise.
  • When kneading by hand, use light flouring sparingly to avoid dry dough.
  • Windowpane test ensures gluten development for a chewy yet tender crust.
  • Use parchment paper or silicone mats for easy pizza transfer and cleanup.
  • Adjust toppings according to dietary preferences or availability.
