These Homemade Turkey Nuggets are a crispy, gluten-free, and dairy-free alternative to traditional chicken nuggets. Made with tender turkey breast pieces coated in a toasted gluten-free panko breadcrumb mixture and baked to perfection, they are a delicious and healthier option perfect for a family meal or snack.

Ingredients

Turkey

  • 1.5 pounds boneless, skinless turkey breast, cut into 1–1.5-inch pieces
  • 1 teaspoon salt

Bread Crumb Mixture

  • 1 cup gluten-free panko breadcrumbs
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon granulated garlic

Other

  • 2 eggs
  • 3 tablespoons olive oil
  • Nonstick cooking spray (for baking sheet)

Instructions

  1. Pound Turkey Meat: Place the cut turkey breast pieces on a cutting board and cover them with plastic wrap. Gently pound with a rolling pin or meat mallet to flatten slightly so the pieces are evenly thick, ensuring even cooking. Season with salt.
  2. Toast Bread Crumbs: In a dry pan over low heat, toast the gluten-free panko breadcrumbs for 3–4 minutes, stirring constantly to prevent burning, until lightly golden and fragrant.
  3. Prepare Breading Mixture: Combine the toasted gluten-free panko breadcrumbs with ground black pepper and granulated garlic in a bowl to create the breading mix.
  4. Dip Turkey Pieces in Egg: In a separate bowl, whisk the eggs thoroughly. Add the turkey pieces to the eggs, coating them completely.
  5. Coat in Breadcrumb Mixture: Remove each turkey piece from the egg mixture and coat it evenly in the prepared breadcrumb mixture, ensuring full coverage.
  6. Place Nuggets on Baking Sheet: Line a baking tray with aluminum foil and spray it lightly with nonstick cooking spray. Arrange the coated turkey nuggets on the tray in a single layer. Lightly drizzle the nuggets with olive oil to help with crisping.
  7. Bake Until Crispy: Preheat the oven to 375°F (190°C). Bake the nuggets for about 20 minutes, or until they are golden brown and cooked through. Serve warm with your favorite dipping sauce.

Notes

  • For an extra crispy texture, you can flip the nuggets halfway through baking.
  • Make sure to toast the breadcrumbs to enhance their flavor and crunchiness.
  • These nuggets can be reheated in the oven to maintain crispiness rather than microwaving.
  • You can substitute olive oil with avocado oil or another high-heat oil if preferred.
  • Ensure turkey pieces are of uniform size for even cooking.
