Delicious and easy-to-make Honey Garlic Noodles featuring ground chicken cooked in a flavorful garlic chili sauce, soy sauce, honey, and ginger mixture, combined with fresh coleslaw mix and tender rice noodles. This quick skillet dish is perfect for a satisfying weeknight dinner or meal prep.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 3 tablespoons garlic chili sauce
  • ¼ cup soy sauce or coconut aminos
  • ⅓ cup honey
  • 1 teaspoon ground ginger
  • 2 cups coleslaw mix
  • 8 ounces rice noodles (cooked according to package directions; use gluten-free noodles if you're GF)

Instructions

  1. Prepare Noodles: If you haven’t already, cook your rice noodles according to the package directions. Drain well and set aside to be added later.
  2. Heat Oil and Cook Chicken: Heat the olive oil in a large skillet over medium heat until hot. Add the ground chicken to the skillet.
  3. Cook Ground Chicken: Use a spatula to break apart the chicken as it cooks for 3-5 minutes, stirring regularly, until it is fully cooked through and no pink remains.
  4. Add Sauces and Vegetables: Add the garlic chili sauce, soy sauce or coconut aminos, honey, ground ginger, and coleslaw mix to the cooked chicken. Stir well to combine all ingredients and keep the pan over medium heat. Allow the mixture to cook for 5 more minutes, stirring frequently so the flavors meld and the coleslaw mix softens slightly.
  5. Combine Noodles: Turn off the heat and fold or stir the cooked rice noodles into the skillet mixture until evenly combined and coated with the sauce.
  6. Serve and Store: Serve the honey garlic noodles immediately while warm. Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, microwave covered with a paper plate or paper towel for about a minute, stirring halfway through, or reheat in a pan over low to medium heat until warmed through.

Notes

  • Use gluten-free rice noodles and tamari or coconut aminos instead of soy sauce to make this recipe gluten-free.
  • Adjust the amount of garlic chili sauce to control the spice level.
  • For a vegetarian version, substitute ground chicken with crumbled tofu or tempeh and use a vegetarian chili sauce.
  • Leftovers keep well refrigerated up to 4 days and can be reheated easily on the stove or microwave.
  • Adding fresh herbs like chopped cilantro or green onions can elevate the flavor.
