This Honey Garlic Shrimp Stir Fry is a quick and flavorful weeknight meal featuring tender shrimp and crisp asparagus coated in a sweet and savory honey garlic sauce. Ready in just 15 minutes, it's a perfect balance of protein and vegetables with a delicious Asian-inspired glaze.

Ingredients

For the Stir Fry

  • 1 Tbsp olive oil
  • 1 1/2 lb medium shrimp (peeled and deveined)
  • 1 lb asparagus (trimmed and cut into 1-inch pieces)
  • Salt and pepper (to taste)

For the Sauce

  • 1/4 cup reduced sodium soy sauce
  • 1 Tbsp rice vinegar
  • 2 Tbsp honey
  • 4 cloves garlic (minced)
  • 2 tsp fresh ginger (minced)
  • 1-2 tsp cornstarch (to thicken sauce)

Instructions

  1. Make the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey, minced garlic, minced ginger, and cornstarch until well combined. Set the sauce mixture aside while preparing the shrimp and vegetables.
  2. Cook the shrimp: Heat a large skillet over medium-high heat and drizzle with olive oil. Add the shrimp and cook, stirring occasionally, until the shrimp just start to turn pink and are mostly cooked through, about 3 minutes.
  3. Add the asparagus: Add the trimmed and cut asparagus pieces to the skillet with the shrimp. Season with salt and pepper to taste. Continue cooking, stirring occasionally, until the asparagus is tender but still crisp, about 2 to 3 minutes.
  4. Combine with sauce: Pour the prepared honey garlic sauce over the shrimp and asparagus in the skillet. Toss everything together and cook for another 2 to 3 minutes until the sauce thickens and evenly coats the shrimp and asparagus.
  5. Finish and serve: Remove the skillet from heat. Optionally, garnish with sesame seeds and an extra crack of black pepper. Serve the stir fry immediately while hot and enjoy a quick, flavorful meal.

Notes

  • For a gluten-free version, substitute the soy sauce with tamari or coconut aminos.
  • Be careful not to overcook the shrimp as they can become rubbery; they cook quickly and only need about 3 minutes.
  • You can add other vegetables like bell peppers or snap peas for more color and nutrition.
  • Adjust the honey quantity to your preferred sweetness level.
  • Serve over steamed rice or noodles for a more filling meal.
