Ingredients

Chicken Wings

  • 2 ½ pounds chicken wings (halved at the joint)
  • 1 tablespoon baking powder (aluminum free)
  • ½ teaspoon garlic powder
  • ¼ teaspoon white pepper
  • ½ teaspoon kosher salt

Sauce

  • 2 tablespoons butter
  • 4 cloves garlic (grated)
  • 3 tablespoons Gochujang paste
  • 1 tablespoon toasted sesame oil
  • 2-3 tablespoons honey
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon rice vinegar

Toppings

  • Sesame seeds
  • Green onions

Instructions

  1. Season Wings: Pat the chicken wings dry with paper towels if time allows. In a bowl, mix baking powder, garlic powder, white pepper, and kosher salt. Evenly season all over the wings with this mixture. Place the wings on a wire rack set over a baking sheet and refrigerate uncovered on the bottom shelf overnight for best results or at least 45 minutes.
  2. Temperature Adjustment: Remove the wings from the refrigerator 30-40 minutes before baking to bring them closer to room temperature, which helps with even cooking.
  3. Preheat and Setup: Position an oven rack in the upper third of the oven and preheat the oven to 475ºF (246ºC). Line a baking sheet with foil and place a spray-coated wire rack on top to prevent sticking. Arrange the wings skin side up on the wire rack.
  4. Bake Wings: Bake the wings for 28-38 minutes, flipping them after the first 18 minutes to ensure even browning. They should turn golden and be cooked through. (For air fryer adaptation, reduce time accordingly.)
  5. Make the Sauce: In a saucepan over medium heat, melt butter. Add grated garlic and sauté for 45-60 seconds until fragrant. Stir in Gochujang paste, toasted sesame oil, honey, soy sauce, and rice vinegar. Whisk and bring sauce to a simmer, then immediately remove from heat to avoid burning.
  6. Toss Wings in Sauce: Pour the warm sauce into a large metal bowl, add the baked wings, and toss thoroughly to coat every wing evenly with the sticky glaze.
  7. Optional Broil and Serve: For extra color and slight crispiness, place sauced wings under the broiler for a few seconds before serving. Garnish with toasted sesame seeds and chopped green onions, then serve hot.

Notes

  • For crispier wings, allow them to dry uncovered in the fridge overnight.
  • Air fryer instructions: cook at 400ºF for about 20-25 minutes, shaking halfway through.
  • Adjust honey amount for desired sweetness.
  • Use aluminum-free baking powder to avoid off-flavors.
  • Broiling at the end is optional but adds extra crispiness and color.
