This Instant Pot Sweet Potatoes recipe offers a quick and effortless way to prepare perfectly tender and flavorful sweet potatoes. By using the pressure cooking method, these sweet potatoes cook evenly without peeling and are ready in under 40 minutes, making them an ideal healthy side dish or snack.

Ingredients

Sweet Potatoes

  • 4 sweet potatoes, all roughly the same size (small: 6 to 8 ounces each; medium: 8 to 12 ounces each; or large: 12 ounces or more)
  • 1 cup cool water (increase to 1 1/2 cups for an 8-quart Instant Pot)

For Serving

  • Salt, to taste
  • Black pepper, to taste
  • Butter, optional
  • Other toppings of choice, optional

Instructions

  1. Scrub the Sweet Potatoes: Thoroughly wash the sweet potatoes under running water to remove any dirt. There is no need to peel them. Pierce each sweet potato a few times with a fork to allow steam to escape while cooking.
  2. Prepare the Instant Pot: Place the stainless steel trivet with handles up inside the Instant Pot. This allows the sweet potatoes to sit above the water and prevents them from steaming directly in water.
  3. Arrange Sweet Potatoes and Add Water: Place the sweet potatoes on the trivet inside the Instant Pot. Pour in 1 cup of cool water (or 1 1/2 cups if using an 8-quart model).
  4. Seal and Cook: Secure the Instant Pot lid and set the valve to the sealing position. Select manual pressure cooking on HIGH. Cook for 12 minutes for small sweet potatoes (6 to 8 ounces), 17 minutes for medium sweet potatoes (8 to 12 ounces), or 25 minutes for large sweet potatoes (12 ounces or more).
  5. Pressure Release: Once cooking is complete, allow the Instant Pot to naturally release pressure for 10 minutes. After this, carefully perform a quick release by turning the valve to venting to release any remaining pressure. Open the lid carefully.
  6. Serve: Using tongs, carefully remove the hot sweet potatoes from the pot. Make a slit across the top or cut them in half, fluff up the insides with a fork, and serve immediately. Top with salt, pepper, butter, or any other preferred toppings.

Notes

  • Do not peel the sweet potatoes before cooking; leaving the skin on helps retain nutrients and moisture.
  • Cooking time depends on the size of the sweet potatoes; smaller ones cook faster.
  • Natural pressure release is essential to ensure the sweet potatoes finish cooking properly and retain their texture.
  • Use tongs to remove the sweet potatoes as they will be very hot.
  • Toppings like cinnamon, maple syrup, or sour cream can also complement the sweet potatoes nicely.
