Ingredients

For the Cake

  • 4 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt
  • 1 ½ teaspoon cinnamon
  • 8 ounces cold unsalted butter
  • 2 peeled, cored, and large diced Granny Smith apples
  • 2 peeled, cored, and large diced Golden Delicious apples
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk

For the Custard

  • 4 egg yolks
  • 1 cup whole milk
  • ½ cup sugar
  • 1 teaspoon good vanilla extract

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the apple cake.
  2. Prepare the cake batter: In a large bowl, cream together the all-purpose flour, 1 cup sugar, baking powder, sea salt, cinnamon, and cold unsalted butter using a pastry knife until the butter pieces are about the size of rice grains.
  3. Add the apples: Fold the diced Granny Smith and Golden Delicious apples into the flour and butter mixture carefully with a spoon until all apple pieces are well coated.
  4. Mix wet ingredients: In a separate bowl, whisk together the eggs, vanilla extract, and whole milk until combined.
  5. Combine wet and dry ingredients: Pour the egg mixture into the flour-apple mixture and gently combine until a thick dough forms.
  6. Transfer to pan and bake: Grease a 9-inch springform pan, pour in the batter evenly, and bake in the preheated oven for 80 to 90 minutes until the cake is golden brown on top and firm in the center.
  7. Cool the cake: Remove the cake from the oven and cool completely on a wire rack to room temperature before slicing and serving.
  8. Start the custard base: Whisk the egg yolks in a medium bowl and set aside.
  9. Heat milk and sugar: In a medium pot over medium heat, gently heat the whole milk and sugar just until it begins to lightly boil.
  10. Temper the egg yolks: Slowly pour the hot milk mixture into the bowl with the egg yolks while constantly stirring to prevent curdling.
  11. Cook the custard: Pour the mixture back into the pot and cook over low heat, stirring continuously, until the custard thickens to the consistency of Alfredo sauce.
  12. Finish the custard: Remove from heat, whisk in the vanilla extract, and pour a small amount over a cooled slice of the apple cake before serving.

Notes

  • Ensure the butter for the cake is cold for better texture and flakiness.
  • A springform pan helps with easier removal of the delicate apple cake.
  • Cook the custard on low heat and stir constantly to avoid scrambling the eggs.
  • This cake is best served at room temperature with freshly made custard.
  • Substitute apples with other firm fruit like pears for a different twist.
  • Allow the cake to cool fully to prevent the custard from melting the cake when served.
