Ingredients

For the Meat Mixture

  • 1 pound ground beef, chicken, or turkey
  • 1 jalapeño, seeded (optional), and chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

For the Rolls and Cheese

  • 1 package (12 count) dinner rolls, halved lengthwise
  • 4 ounces cream cheese, at room temperature
  • 1/3 cup drained pickled jalapeños
  • 4-6 slices pepper jack cheese
  • 1 cup shredded spicy cheddar or regular cheddar

For the Butter Topping

  • 2 tablespoons salted butter, at room temperature
  • 1 clove garlic, chopped
  • 1 tablespoon chopped fresh basil or cilantro
  • 2 green onions, chopped

For the Special Sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 clove garlic, grated
  • 1 tablespoon pickled jalapeño juice
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Make the special sauce. In a bowl, combine mayonnaise, ketchup, grated garlic, pickled jalapeño juice, and Worcestershire sauce. Stir thoroughly until smooth and set aside for flavors to meld.
  2. Preheat the oven. Set your oven to 350°F (175°C) to prepare for baking the sliders.
  3. Cook the meat mixture. Heat a skillet over medium heat and add the ground meat, chopped jalapeño, Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper. Cook until the meat is browned completely, breaking it up as it cooks, about 10 minutes. Remove from heat.
  4. Assemble the sliders. Place the bottom halves of the dinner rolls on a baking sheet lined with parchment paper. Spread cream cheese evenly on each bottom roll, then layer with drained pickled jalapeños. Pile the cooked meat on top, then drizzle about 1/4 cup of the special sauce over the meat. Add slices of pepper jack cheese and sprinkle shredded cheddar cheese over each slider.
  5. Prepare the butter topping. In a small bowl, mix together softened butter, chopped garlic, fresh basil or cilantro, and chopped green onions. Spread this flavorful butter mixture evenly over the top halves of the rolls.
  6. Bake the sliders. Place the assembled tops onto the sliders and bake in the preheated oven for 20-30 minutes, or until the cheese is fully melted and bubbly.
  7. Serve. Remove from the oven and serve immediately, accompanied by additional special sauce for dipping.

Notes

  • You can substitute ground chicken or turkey for beef for a leaner option.
  • Adjust the jalapeño quantity and use seeds according to your desired spice level.
  • Fresh herbs like cilantro or basil can be adjusted or omitted based on preference.
  • Make sure the cream cheese is at room temperature for easier spreading.
  • These sliders are best served fresh but can be reheated in the oven for a few minutes.
