This Keto Chicken Broccoli Casserole is a quick and delicious low-carb meal featuring tender broccoli, cooked chicken, and a rich combination of creamy cheeses. Ready in just 21 minutes, it's perfect for a comforting weeknight dinner with a crispy, golden cheese topping broiled to perfection.

Ingredients

Vegetables

  • 16 ounces broccoli, coarsely chopped
  • 4 cloves garlic, minced

Dairy

  • 2 tbsp butter, divided
  • 3/4 cup heavy whipping cream
  • 1 1/3 cups shredded mozzarella, divided
  • 1/3 cup grated parmesan cheese

Protein

  • 1 1/2 lb cooked, chopped chicken (about 4 cups)

Seasoning

  • Salt and pepper, to taste

Instructions

  1. Sauté Broccoli: Set a 10-inch ovenproof skillet over medium heat and add 1 tablespoon of the butter. Once melted, add the broccoli and sauté until bright green and just tender, about 4 minutes. Remove the broccoli to a bowl to set aside.
  2. Prepare Cream Sauce: Melt the remaining 1 tablespoon of butter in the same pan and add the minced garlic. Cook until fragrant, about 1 minute. Pour in the heavy whipping cream and bring to a simmer, cooking until the sauce is reduced and thickened, approximately 3 to 5 minutes.
  3. Add Cheese to Sauce: Stir in 1/3 cup of the shredded mozzarella and all of the grated parmesan cheese until melted and well combined. Season the sauce with salt and pepper to taste, enriching its flavor.
  4. Combine Ingredients: Stir the sautéed broccoli and the cooked, chopped chicken into the creamy cheese sauce. Evenly distribute the mixture in the skillet and then top it with the remaining 1 cup of shredded mozzarella cheese.
  5. Broil the Casserole: Preheat your broiler. Position the skillet about 6 inches from the heat source and broil until the cheese topping is bubbling and starting to brown, between 2 to 5 minutes depending on your broiler’s intensity. Keep a close eye to prevent burning.

Notes

  • Use an ovenproof skillet to transition easily from stovetop to broiler without transferring the food.
  • Feel free to swap mozzarella for another melty cheese like cheddar for a different flavor profile.
  • Adding a pinch of red pepper flakes to the cream sauce can give this casserole a subtle kick.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
