A refreshing and creamy Key Lime Pie Chia Pudding that combines the tanginess of key limes with the nutritious goodness of chia seeds and cashews. This no-bake dessert features two layers: a zesty chia seed pudding base and a smooth lime mousse topping, perfect for a healthy, make-ahead treat.

Ingredients

Chia Pudding

  • 4 tbsp chia seeds
  • 1 cup almond milk
  • Zest of 3 key limes (or 1 regular lime)
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract

Lime Mousse

  • 1/2 cup raw cashews, soaked in hot water for 1 hour then drained
  • 6 tbsp full-fat coconut milk (from a can)
  • 2 tbsp maple syrup
  • 1/4 cup key-lime juice (or lime juice)
  • Zest of 2 key limes (or 1 regular lime)
  • 1/2 tsp matcha powder for color (optional)

Instructions

  1. Prepare the chia pudding: In a bowl, combine the chia seeds, almond milk, key lime zest, maple syrup, and vanilla extract. Whisk thoroughly for about 30 seconds to ensure all ingredients are well incorporated and the chia seeds are evenly dispersed.
  2. Chill the chia pudding: Transfer the mixture to the refrigerator and let it sit for at least 2 hours, or ideally overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
  3. Make the lime mousse: Place the soaked and drained cashews into a blender or food processor. Add the coconut milk, maple syrup, key lime juice, zest, and matcha powder if using. Blend until completely smooth and creamy, pausing occasionally to scrape down the sides to ensure an even blend.
  4. Assemble the pudding: Divide the chilled chia pudding evenly into four small jars or serving dishes. Then, spoon the lime mousse mixture over the chia layer, creating a two-layer dessert.
  5. Set before serving: Return the assembled jars to the refrigerator and let them set for an additional 2 hours to allow the mousse to firm up and the flavors to meld. Serve chilled.

Notes

  • Soaking the cashews is essential for achieving a smooth mousse texture.
  • If you don't have key limes, regular limes can be used as a substitute.
  • The matcha powder is optional and is used primarily for color enhancement.
  • For a sweeter pudding, adjust the maple syrup to taste.
  • This dessert is perfect for a make-ahead healthy snack or light dessert.
