A refreshing and vibrant Lady Pea Salad featuring tender lady peas tossed with a zesty herb and lemon dressing, perfect for a light and healthy side dish or a flavorful vegetarian option.

Ingredients

Salad Ingredients

  • 4 cups fresh or frozen lady peas (Frozen lady peas may be labeled as zipper peas at an international farmers' market)

Dressing Ingredients

  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup finely chopped shallot (from 1 small shallot)
  • 1 Tbsp. grated lemon zest (from 2 lemons)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 1/4 cup extra-virgin olive oil
  • 1 Tbsp. Dijon mustard
  • 1 1/2 tsp kosher salt
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Cook lady peas: Bring a large pot of water to a boil over medium-high heat. Add the lady peas, then reduce the heat to medium and let them simmer gently until tender, about 20 to 25 minutes.
  2. Make dressing: While the peas are cooking, combine the chopped fresh basil, parsley, mint, finely chopped shallot, grated lemon zest, fresh lemon juice, extra-virgin olive oil, Dijon mustard, kosher salt, and crushed red pepper flakes in a large bowl. Stir well to create a bright and flavorful dressing.
  3. Finish salad: Drain the cooked lady peas and let them cool for about 15 minutes. Once cooled, transfer the peas into the bowl with the dressing and toss thoroughly to coat evenly. Serve the salad immediately for the freshest taste.

Notes

  • You can use fresh or frozen lady peas; if frozen, ensure they are fully thawed before cooking.
  • Adjust the crushed red pepper to taste for desired spiciness.
  • This salad is best served fresh but can be refrigerated for up to one day.
  • For a vegan and vegetarian dish, all ingredients are naturally suitable.
