These Lofty Popovers, also known as Yorkshire Pudding, are light and airy pastries that puff up beautifully in the oven. Made with simple ingredients like eggs, milk, and flour, and baked in a hot oven, they make a perfect side to savory meals or a delightful snack when served with butter. The key to their height and softness is warming the milk slightly and using a blender to create a smooth batter that rises well during baking.

Ingredients

Main Ingredients

  • Softened butter, for greasing, plus more for serving
  • 3 large eggs, room temperature
  • 1 1/2 cups (375 grams) room-temperature 2% milk
  • 1 1/2 cups (192 grams) bread flour or all-purpose flour
  • 1 teaspoon (3 grams) kosher salt (Diamond Crystal brand recommended)
  • 3 tablespoons (43 grams) melted salted butter (unsalted is fine)

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 425ºF (218ºC) and place a rack in the center position. Generously grease a 12-cup muffin tin with softened butter to ensure the popovers don’t stick.
  2. Bring Eggs to Room Temperature: If your eggs are not at room temperature, place them in a bowl covered with hot tap water and let them sit for 10 minutes before removing.
  3. Warm the Milk: Heat the milk in the microwave for about 1 minute until roughly 75ºF (24ºC), or slightly warmer. You can also warm it gently on the stovetop. This step helps achieve loftier popovers.
  4. Blend Batter Ingredients: Add the eggs, warmed milk, flour, and kosher salt to a blender. Blend for around 30 seconds on medium speed (speed 5 on a Vitamix) until the batter is smooth and well combined.
  5. Add Melted Butter: Pour in the melted butter and blend for an additional 15-20 seconds to fully incorporate it. Alternatively, you can whisk the ingredients by hand in a series: eggs, milk, and salt first; then flour; finally the butter.
  6. Fill Muffin Tin: Pour the batter into the prepared muffin tin, filling each cup about halfway. Distribute any leftover batter evenly among the cups to ensure uniform popovers.
  7. Bake the Popovers: Place the muffin tin in the hot oven immediately. Bake at 425ºF for 20 minutes to build rise, then reduce the oven temperature to 350ºF (177ºC) and bake for an additional 10 minutes until golden and puffed.
  8. Serve Immediately: Remove the popovers from the oven, transfer to a serving bowl or plate, and serve right away with softened butter for spreading. Enjoy their fluffy, crisp texture at their peak.

Notes

  • Warming the milk slightly is key to achieving lofty, well-risen popovers.
  • Using a blender ensures the batter is perfectly smooth, which helps with rise and texture.
  • Room temperature eggs perform better for a stable batter; if you forget to take them out, warming them in hot water is a quick fix.
  • Serving popovers immediately is important, as they tend to deflate and lose their crisp exterior over time.
  • You can use either bread flour or all-purpose flour depending on what you have; bread flour yields a slightly chewier texture.
