Delightfully sweet and colorful Lucky Charms Bars made with melted marshmallows, buttery Lucky Charms cereal, and finished with a smooth white chocolate coating. These no-bake treats are perfect for parties, snacks, or anytime a fun and nostalgic dessert is needed.

Ingredients

Main Ingredients

  • 5 cups Miniature marshmallows (10-ounce package, 283 grams)
  • 4 tablespoons unsalted butter (57 grams)
  • 6 cups Lucky Charms cereal

Topping

  • 12 ounces White chocolate bar or almond bark, broken into smaller pieces for melting

Instructions

  1. Prepare the pan: Line a 9x13 baking sheet with parchment paper, extending the paper above the pan edges to allow for easy removal of bars. Grease the parchment paper lightly with nonstick cooking spray.
  2. Reserve marshmallows: Remove about ¼ cup of the miniature marshmallows from the total to be used later for topping the bars.
  3. Melt butter and marshmallows: In a large pot over medium heat, melt the butter. Once melted, add the remaining marshmallows and stir continuously until the mixture is smooth and completely melted. Remove the pot from heat immediately to prevent burning.
  4. Combine with cereal: Add the Lucky Charms cereal to the melted marshmallow mixture. Stir thoroughly until the cereal is fully coated and evenly mixed.
  5. Press into pan and add marshmallow topping: Pour the mixture into the prepared pan, spreading it evenly with a greased spoon or spatula. Scatter the reserved ¼ cup marshmallows over the top, gently pressing them into the surface so they adhere.
  6. Cool and set: Allow the bars to cool and set at room temperature for 30 minutes to 1 hour. Once set, lift the bars out by the parchment paper and cut into 20 even pieces.
  7. Prepare the white chocolate: Break the white chocolate bar or almond bark into small pieces and place into a medium-sized microwave-safe bowl.
  8. Melt the chocolate: Microwave the chocolate in 30-second intervals, stirring well between each interval, until the chocolate is completely melted and smooth.
  9. Dip bars in chocolate: Dip the bottom of each cut bar into the melted white chocolate, coating the bottom and slightly up the sides for a visible chocolate layer. Place the dipped bars on a sheet of wax paper to allow the chocolate to harden.
  10. Storage: Store the finished bars in an airtight container at room temperature for up to five days or freeze for longer storage.

Notes

  • Use nonstick spray or butter on utensils when pressing mixture to prevent sticking.
  • If preferred, substitute white chocolate with almond bark for easier melting and coating.
  • Make sure to stir marshmallow mixture continuously while melting to avoid burning.
  • Allow chocolate coating to fully set before serving or packaging to prevent smudging.
  • These bars can be customized by adding additional mix-ins or using a different marshmallow cereal if desired.
