Ingredients

Dry Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon kosher salt
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder

Wet Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 1/4 cups packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract

Add-ins

  • 1 1/4 cups M&M’s, divided
  • 3/4 cup semi-sweet chocolate chips
  • Flaky sea salt, for sprinkling on bars

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper and lightly grease it to prevent sticking. Set aside.
  2. Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, cornstarch, kosher salt, baking soda, and baking powder until well combined. This ensures even distribution of leavening agents.
  3. Cream Butter and Sugars: In the bowl of a stand mixer, cream together the room temperature unsalted butter, light brown sugar, and granulated sugar until the mixture is smooth and fluffy. Scrape down the sides of the bowl as needed to incorporate all ingredients evenly.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time along with the vanilla extract until fully combined, creating a rich cookie dough base.
  5. Combine Dry and Wet Ingredients: Turn off the mixer and add the dry ingredient mixture to the wet ingredients. Mix on low speed just until all ingredients are combined; be careful not to over mix to ensure tender bars.
  6. Mix in M&M’s and Chocolate Chips: Fold in 1 cup of the M&M’s and all the semi-sweet chocolate chips evenly through the dough with a spatula or spoon.
  7. Press Dough into Pan: Transfer the cookie dough into the prepared pan and press it evenly into the bottom. Then sprinkle the remaining 1/4 cup of M&M’s on top and lightly press them into the dough. Sprinkle flaky sea salt over the surface for a delightful salty contrast.
  8. Bake: Bake in the preheated oven for 20 to 24 minutes, or until the edges are set and the top is lightly browned. The center might look slightly underbaked but will firm up as it cools.
  9. Cool and Serve: Remove from the oven and place the pan on a wire rack to cool completely. Once cooled, use the parchment paper to lift the cookie bars out of the pan. Cut into squares and serve.
