A delightful appetizer featuring juicy cherry tomatoes marinated in a tangy and herbaceous vinaigrette with sweet honey and garlic, served alongside creamy burrata cheese for a perfect balance of flavors. This fresh and easy recipe is ideal for gatherings or as a light snack paired with grilled bread or crackers.

Ingredients

Marinade

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons champagne or apple cider vinegar
  • 2 teaspoons honey
  • 1-2 cloves garlic, grated
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons chopped fresh thyme
  • Kosher salt, to taste
  • Black pepper, to taste
  • Chili flakes, to taste

Vegetables

  • 3 cups cherry tomatoes, halved

Cheese and Serving

  • 2-3 balls burrata cheese, at room temperature
  • Grilled bread or crackers, for serving

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the extra virgin olive oil, balsamic vinegar, champagne or apple cider vinegar, honey, grated garlic, chopped fresh basil, and chopped fresh thyme until fully combined. Season the mixture with kosher salt, black pepper, and chili flakes according to your taste preferences.
  2. Marinate the Tomatoes: Add the halved cherry tomatoes to the marinade and toss gently to coat all the pieces evenly. Let the tomatoes marinate at room temperature for 30 minutes, or for a deeper flavor, refrigerate overnight. If chilled, bring the tomatoes back to room temperature before serving.
  3. Assemble and Serve: To serve, tear or break the balls of burrata cheese into a serving bowl or platter. Arrange the marinated cherry tomatoes around the burrata. Pair the dish with grilled or toasted bread or crackers to complement the creamy cheese and tangy tomatoes.

Notes

  • Marinating the tomatoes overnight deepens the flavor, but 30 minutes is sufficient for a bright, fresh taste.
  • Bring the burrata cheese to room temperature for the best creamy texture.
  • Adjust the chili flakes to control the level of spiciness.
  • Use fresh herbs for optimum flavor; dried herbs will alter the taste significantly.
  • This dish is best served fresh and should be consumed within a day.
