Marry Me Chickpeas is a creamy, flavorful vegan skillet dish featuring tender chickpeas simmered in a rich tomato and vegan cream sauce with sun-dried tomatoes, garlic, herbs, and a hint of spice. Perfect for a quick, comforting meal served with crusty bread, rice, pasta, or a baked sweet potato.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup vegan cream
  • 2 cups baby spinach, sliced
  • 4-5 fresh basil leaves, chopped
  • Optional: 1/2 cup grated vegan parmesan cheese (such as Violife)

Instructions

  1. Warm the Oil and Garlic: In a large sauté pan over low-medium heat, warm the olive oil. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant to release its aroma without burning it.
  2. Sauté Aromatics and Spices: Stir in the chopped sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook the mixture for 1 minute to blend the flavors well.
  3. Add Chickpeas and Liquids: Add the rinsed chickpeas, vegetable broth, tomato paste, vegan cream, and sliced baby spinach. Stir well to evenly combine all ingredients.
  4. Simmer the Dish: Bring the mixture to a gentle simmer over medium heat and cook for about 5 minutes until warmed through and the spinach has wilted. Taste and adjust seasoning by adding more salt, pepper, or red chili flakes if desired.
  5. Add Fresh Basil and Cheese: Remove the pan from heat and stir in the chopped fresh basil and grated vegan parmesan cheese if using to finish with fresh and creamy touch.
  6. Serve: Serve immediately with crusty bread for dipping or on top of cooked rice, pasta, or a baked sweet potato. Enjoy this comforting vegan chickpea skillet meal.

Notes

  • Vegan cream can be made by blending soaked cashews with water or use a store-bought vegan cream substitute for richness.
  • Adjust the red chili flakes to control the spiciness according to your taste preference.
  • This dish pairs wonderfully with crusty artisan bread, steamed rice, gluten-free pasta, or baked potatoes for a comforting meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
