Perfect for a light lunch or a healthy side dish, this salad comes together quickly in just 15 minutes and offers a delightful combination of textures and flavors.

Ingredients

For the Lemon Vinaigrette

  • 1 small shallot, minced (about 2 tablespoons)
  • 1 tablespoon dijon mustard
  • 1 lemon, zested and juiced
  • 1 tablespoon white wine vinegar
  • 2 teaspoons honey
  • 4 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

For the Salad

  • 3 cups cooked millet, cooled to room temperature
  • 2 green onions, white and green parts, sliced thin
  • ½ cup radishes, julienned or thinly sliced
  • ½ cup kalamata olives, roughly chopped
  • ½ English (hothouse) cucumber, diced
  • 15-ounce can chickpeas, drained
  • 1 cup crumbled feta cheese
  • ⅓ cup chopped fresh mint
  • ⅓ cup chopped fresh parsley

Instructions

  1. Prepare the Lemon Vinaigrette: In a small bowl, combine the minced shallot, dijon mustard, lemon zest and lemon juice, white wine vinegar, honey, extra virgin olive oil, kosher salt, and black pepper. Whisk the ingredients thoroughly until well emulsified and set aside to allow the flavors to meld.
  2. Combine the Salad Ingredients: In a large mixing bowl, add the cooked and cooled millet along with the sliced green onions, julienned radishes, chopped kalamata olives, diced cucumber, drained chickpeas, and crumbled feta cheese. Toss gently to mix the ingredients evenly without breaking the millet or cheese.
  3. Add the Vinaigrette: Pour the prepared lemon vinaigrette over the combined salad ingredients. Toss the salad carefully to ensure every component is evenly coated with the dressing for maximum flavor.
  4. Finish with Fresh Herbs: Just before serving, sprinkle the freshly chopped mint and parsley over the salad and give a gentle final toss. Adding the herbs last ensures they impart their fresh aroma and taste, which can degrade if mixed too early. Serve immediately and enjoy your refreshing Mediterranean Chickpea Millet Salad.
