This vibrant Mediterranean Potato Salad is a refreshing twist on a classic side dish, featuring tender potatoes tossed with a zesty lemon-Dijon dressing, tangy kalamata olives, and fresh herbs like parsley and cilantro. Perfect served warm or chilled, it offers a delightful combination of flavors and textures that complement any Mediterranean-inspired meal.

Ingredients

Potatoes

  • 3 pounds small yellow or russet potatoes
  • 1 tablespoon salt (for boiling)

Salad Add-ins

  • ½ cup red onions, chopped
  • ½ cup kalamata olives, chopped
  • ¼ cup parsley, chopped
  • ¼ cup cilantro, chopped
  • 2-3 green onions, thinly sliced

Dressing

  • ⅓ cup fresh lemon juice
  • ⅓ cup extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Boil the Potatoes: Place the potatoes in a large pot and cover with water. Add 1 tablespoon of salt and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 15 to 20 minutes. Drain and set aside to cool.
  2. Prepare the Potatoes: Once cooled, cut the potatoes into bite-sized chunks and transfer them to a large salad bowl, making them easy to mix with the dressing and other ingredients.
  3. Make the Dressing: In a separate bowl, whisk together the lemon juice, extra virgin olive oil, Dijon mustard, ½ teaspoon salt, and ½ teaspoon black pepper until well combined.
  4. Toss the Salad: Pour the dressing over the potatoes in the salad bowl. Gently toss to combine, then add the chopped red onions, kalamata olives, parsley, cilantro, and sliced green onions. Toss the salad gently once more to incorporate all the ingredients evenly.
  5. Serve or Chill: Serve the Mediterranean Potato Salad warm immediately, or refrigerate for a few hours to serve chilled. If the salad seems dry before serving, drizzle a little more olive oil on top for extra moisture and flavor.

Notes

  • This salad can be prepared a few hours ahead and tastes even better after resting.
  • Use fresh herbs for the best flavor; parsley and cilantro are essential for authenticity.
  • Adjust the salt and pepper to taste after mixing the salad.
  • For a more robust flavor, let the salad chill overnight in the refrigerator.
  • If preferred, use baby potatoes to avoid peeling and reduce prep time.
