Ingredients

Steak Bites

  • 1.5 lb steak, cut into bite sized pieces (approx. 1 1/2 in. cubes)
  • 2-3 tablespoons olive oil
  • 1/2 tablespoon fresh thyme, finely chopped (or 3/4 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 2 teaspoons lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly cracked pepper
  • 1 cup grape tomatoes, halved
  • 1/3 cup feta cheese

Simple Yogurt Sauce

  • 1/2 cup plain Greek yogurt
  • 1-2 garlic cloves, minced
  • 1 teaspoon lemon juice
  • 2 teaspoons olive oil
  • 1 tablespoon chopped dill (or 1-2 teaspoons dried)
  • Salt, to taste

Instructions

  1. Prepare the Marinade: In a medium bowl or large Ziploc bag, combine olive oil, minced garlic, dried oregano, fresh thyme, fresh rosemary, lemon juice, sea salt, and freshly cracked pepper. Whisk or shake thoroughly until well blended.
  2. Marinate the Steak: Add the steak bite-sized pieces into the marinade, ensuring each piece is well coated. Cover the bowl or seal the bag and refrigerate for at least 30 minutes; for best flavor, marinate several hours or overnight.
  3. Cook the Steak Bites: Heat a cast iron or nonstick skillet over medium-high heat. Add the marinated steak pieces along with any extra olive oil from the marinade. Cook the steak bites for 2-3 minutes on each side, flipping only once to develop a nice sear. For more well-done steak bites, cook an additional minute or so. Once cooked, remove from heat.
  4. Add Tomatoes and Feta: Toss the halved grape tomatoes into the skillet with the steak bites just long enough to warm them slightly. Sprinkle crumbled feta cheese over the top before serving.
  5. Prepare the Yogurt Sauce: In a small bowl, stir together plain Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, and salt to taste. Mix well and refrigerate until ready to serve.
  6. Serve and Enjoy: Spoon the chilled yogurt sauce over the warm steak bites or serve it on the side as a dipping sauce for a refreshing contrast. Enjoy this vibrant Mediterranean dish immediately.

Notes

  • For deeper flavor, marinate the steak bites overnight if time permits.
  • You can substitute fresh herbs with dried but adjust quantities accordingly.
  • If preferred, use skirt, sirloin, or ribeye steak for best texture.
  • Ensure your skillet is well-heated before adding steak to get a good sear.
  • The yogurt sauce can be made a day ahead and refrigerated to enhance flavors.
  • Serve with warm pita bread or a fresh salad for a complete Mediterranean meal.
