Mini Pancake Cereal is a fun, bite-sized twist on traditional pancakes. These tiny pancakes are cooked on the stovetop into small, cereal-like dots, perfect for serving with syrup, fruit, or toppings. They're quick to make, ideal for a playful breakfast or brunch, and offer all the comforting flavors of classic pancakes in an adorable miniature form.

Ingredients

Dry Ingredients

  • 1 cup all purpose flour
  • 2 tablespoons granulated sugar (or sweetener)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 3/4 cup milk (190ml, plus more as needed)
  • 2 tablespoons melted butter (slightly cooled)
  • 1 teaspoon pure vanilla extract
  • 1 large egg

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the flour, sugar or sweetener, baking powder, and salt. Create a well in the center to prepare for the wet ingredients.
  2. Combine Wet Ingredients: In a separate bowl or directly into the well, whisk together the milk, melted butter, vanilla extract, and egg until smooth.
  3. Make the Batter: Slowly fold the wet ingredients into the dry ingredients, mixing until smooth and free of lumps. If the batter is too thick, add 1-2 extra tablespoons of milk to slightly thin it out without making it runny.
  4. Rest the Batter: Allow the batter to sit for about 5 minutes while heating a nonstick pan or griddle over medium-high heat. Lightly grease the surface with butter or cooking oil to prevent sticking.
  5. Prepare for Cooking: Pour the batter into a squeezable condiment or sauce bottle; alternatively, use a ziplock bag with a small hole cut in the corner for piping.
  6. Cook Mini Pancakes: Squeeze small dots of batter onto the hot, greased pan. Cook until bubbles form on the surface and the tops look set and dry. Flip each mini pancake using a spatula and cook on the other side for 1-2 minutes until golden brown.
  7. Repeat: Continue cooking the remaining batter in batches, lightly greasing the pan between each batch to ensure pancakes don’t stick.
  8. Serve: Enjoy your mini pancake cereal with maple syrup, honey, fresh fruit, ice cream, frozen yoghurt, or simply on their own.

Notes

  • Use a nonstick pan or well-seasoned griddle for best results to prevent sticking.
  • Adjust the batter thickness by adding milk gradually, aiming for a consistency that easily squeezes but is not runny.
  • Lightly grease the pan between batches to maintain even cooking and prevent sticking.
  • Mini pancake cereal is perfect for customizing with various toppings like fresh berries, whipped cream, or nut butters for extra flavor.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
