Ingredients
Dumplings
14-20 Frozen Dumplings
Sauce
3 Tablespoons Red Curry Paste
3 Tablespoons Soy Sauce
2 Tablespoons Sesame Oil (or oil of choice)
1 (14-ounce) can Coconut Milk
2 teaspoons Fresh Ginger, minced
2 Garlic Cloves, minced
1 Tablespoon Rice Vinegar
2 Tablespoons Honey (or real maple syrup)
Garnishes
Cilantro
2 Green Onions, sliced
1 to 2 Tablespoons Chili Crunch
Sesame Seeds
Baby Spinach (optional)
Instructions
Preheat oven and prepare dish: Preheat your oven to 375°F. Grease a medium baking dish or an ovenproof skillet to prevent sticking during baking.
Prepare the sauce: In a bowl, whisk together coconut milk, red curry paste, honey, soy sauce, sesame oil, rice vinegar, minced ginger, and minced garlic. Taste the sauce and adjust seasoning as desired to balance saltiness, brightness, and spice.
Arrange dumplings and add sauce: Place frozen dumplings in a single layer in the baking dish. Pour the prepared sauce evenly over the dumplings, ensuring they are mostly covered.
Bake covered: Cover the dish with aluminum foil and bake for 20 minutes to let the dumplings cook through and the flavors meld.
Finish baking uncovered: Remove the foil and bake for an additional 5-10 minutes until the sauce is bubbling and the dumplings are tender and lightly browned on top.
Add spinach and garnish: If using baby spinach, immediately top the hot dish with fresh spinach to allow it to wilt slightly. Garnish generously with cilantro, sliced green onions, sesame seeds, and chili crunch for added flavor and texture.
Notes
Use frozen dumplings directly from the freezer without thawing for the best texture.
Adjust red curry paste amount based on your preferred spice level.
Freshly minced ginger and garlic add bright and pungent flavors.
Baby spinach is optional but adds a nice fresh contrast to the rich sauce.
Feel free to swap honey for maple syrup to keep the recipe vegan-friendly.
Serve with steamed rice or noodles to make it a complete meal.
