A simple yet flavorful Parmesan Roasted Cauliflower recipe that transforms fresh cauliflower florets into a crispy, golden, and savory side dish. Roasted with olive oil, garlic powder, and a sprinkle of Parmesan cheese, this dish is perfect as a healthy appetizer or accompaniment to your favorite meals.

Ingredients

Cauliflower

  • 1 large cauliflower head (cleaned and separated into florets; approximately 1 pound)

Seasoning

  • 4 tablespoons extra-virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder

Toppings

  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Select a rimmed baking dish large enough to hold the cauliflower florets in a single layer, such as a 9x13-inch rectangular dish.
  2. Prepare Cauliflower: Place the cauliflower florets into the baking dish and toss them with the olive oil, sea salt, black pepper, and garlic powder. Use your hands to make sure each floret is evenly coated with the seasoning and oil.
  3. Initial Roasting: Roast the cauliflower in the preheated oven for 15 minutes. This will begin to tenderize the florets and start the browning process.
  4. Add Parmesan: Remove the baking dish from the oven and gently stir the florets. Sprinkle the grated Parmesan cheese evenly over the cauliflower.
  5. Continue Roasting: Return the dish to the oven and roast for an additional 10 to 15 minutes, or until the cauliflower is tender and golden brown with a crispy Parmesan crust.
  6. Garnish and Serve: Once roasted, remove the cauliflower from the oven, garnish with chopped fresh parsley, and serve warm as a delicious side dish.

Notes

  • For extra crispiness, spread the cauliflower florets in a single layer without overcrowding the pan.
  • Feel free to substitute Parmesan with Pecorino Romano for a sharper flavor.
  • To make the dish spicy, add a pinch of red pepper flakes along with the garlic powder.
  • This dish pairs well with grilled meats or can be served as a vegetarian main course alongside grains.
