Deliciously rich and chewy Peanut Butter Blondies made with creamy peanut butter, brown sugar, and Reese’s Pieces candy for a delightful twist. These blondies are perfect for dessert or a sweet snack, baked to perfection with a soft, moist texture.

Ingredients

Blondie Batter

  • 3/4 cup (170g) unsalted butter, melted and slightly cooled
  • 2 cups (400g) packed light or dark brown sugar
  • 3/4 cup (190g) creamy peanut butter
  • 2 large eggs + 1 extra egg yolk
  • 1 Tablespoon pure vanilla extract
  • 2 cups (250g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Add-ins and Toppings

  • 1 and 1/4 cups (about 260g) Reese’s Pieces, plus extra for topping (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (177°C) and adjust the oven rack to the center position. Line a 9×13-inch metal or glass baking pan with parchment paper, allowing for an overhang on the sides for easy removal of the blondies. Set aside.
  2. Mix Wet Ingredients: In a large bowl, whisk together the melted butter and brown sugar until well combined. Add the creamy peanut butter, then whisk in the 2 large eggs, extra egg yolk, and vanilla extract until the mixture is smooth and fully combined.
  3. Add Dry Ingredients: Add the all-purpose flour, baking powder, and salt to the wet mixture. Using a rubber spatula, fold the ingredients gently until just combined; the batter will be thick. Then fold in the Reese’s Pieces evenly throughout the batter.
  4. Transfer and Add Topping: Spread the batter evenly into the prepared baking pan. Optionally, sprinkle a few extra Reese’s Pieces on top for an attractive finish.
  5. Bake: Bake in the preheated oven for about 30 minutes. Check doneness by inserting a toothpick in the center—if it comes out with wet batter, continue baking and check every 2 minutes until only moist crumbs remain. Avoid overbaking to keep the blondies soft and chewy.
  6. Cool and Serve: Allow the blondies to cool completely in the pan placed on a wire rack. Once cooled, use the parchment paper overhang to lift the blondies out of the pan and cut into squares.
  7. Storage: Store leftover blondies covered at room temperature for up to 1 week to maintain freshness and texture.

Notes

  • Make sure not to overbake the blondies to keep them soft and chewy; moist crumbs on the toothpick test indicate perfect doneness.
  • Using parchment paper with an overhang makes removing the blondies easy and mess-free.
  • You can substitute Reese’s Pieces with other candies or chocolate chips for a different flavor twist.
  • Allow blondies to cool completely before cutting to ensure clean slices.
  • For a nuttier flavor, try using natural peanut butter instead of creamy.
