Ingredients

Main Ingredients

  • 1/2 cup unsweetened plain almond milk (or substitute with coconut, soy, or hemp milk)
  • 3/4 tablespoon chia seeds
  • 2 tablespoons natural salted peanut butter or almond butter (creamy or crunchy, or substitute with other nut or seed butter)
  • 1 tablespoon maple syrup (or substitute with coconut sugar, organic brown sugar, or stevia to taste)
  • 1/2 cup gluten-free rolled oats (rolled oats preferred over steel-cut or quick-cooking oats)

Optional Toppings

  • Sliced banana, strawberries, or raspberries
  • Flaxseed meal or additional chia seeds
  • Granola

Instructions

  1. Combine Wet Ingredients: In a mason jar or small bowl with a lid, add the almond milk, chia seeds, peanut butter, and maple syrup (or your chosen sweetener). Stir gently to combine. The peanut butter does not need to be fully mixed, leaving delightful swirls to enjoy later.
  2. Add Oats: Stir in the gluten-free rolled oats a few more times to distribute them evenly. Press down with a spoon to ensure all oats are fully moistened and immersed in the liquid.
  3. Refrigerate Overnight: Seal the jar or bowl with its lid and place it in the refrigerator for at least 6 hours or overnight to allow the oats and chia seeds to soak and soften.
  4. Serve and Customize: The next day, open your oats and enjoy them chilled directly from the jar. Optionally, add your favorite toppings such as sliced bananas, berries, flaxseed meal, or granola. For a warm option, microwave for 45-60 seconds or heat gently on the stovetop, adding extra liquid if needed.
  5. Storage: Store any leftovers in the refrigerator for up to 2-3 days, though it tastes best within the first 12-24 hours. This recipe is not suitable for freezing.

Notes

  • Use gluten-free rolled oats for best texture and gluten-free compliance.
  • Adjust sweetness by substituting maple syrup with coconut sugar, organic brown sugar, or stevia according to preference.
  • The peanut butter can be creamy or crunchy depending on texture preference.
  • Optional toppings add flavor and texture but are not required.
  • Overnight soaking enhances digestibility and softens the oats without cooking.
  • If heating, leave enough headspace in the jar to prevent overflow during microwaving.
