Pico de Gallo is a fresh, zesty Mexican salsa made from diced tomatoes, onion, bell pepper, and cilantro, all brightened with lime juice and lightly seasoned with salt and optional garlic powder. This quick and easy no-cook recipe adds vibrant flavor to tacos, chips, and a variety of dishes.

Ingredients

Vegetables

  • 5 medium tomatoes (about 4 cups chopped)
  • 1 medium onion (about 1 cup chopped)
  • 1 medium bell pepper (about 1 cup chopped, optional)

Herbs

  • ¼ cup fresh cilantro leaves (roughly chopped)

Other Ingredients

  • 1 medium lime (juiced)
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon salt

Instructions

  1. Dice the Vegetables: Dice the tomatoes, onion, and bell pepper into small, even pieces. Add all the diced vegetables to a large mixing bowl ensuring the pieces are uniform for the best texture.
  2. Prepare the Cilantro: Remove the cilantro leaves from the stems and roughly chop them. Add the chopped cilantro leaves to the bowl with the diced vegetables.
  3. Add Lime Juice: Cut the lime in half and squeeze the juice from both halves over the tomato mixture. This adds a fresh, tangy brightness to the salsa.
  4. Season the Mixture: Sprinkle in the salt and garlic powder (if using) over the mixture. These seasonings enhance the natural flavors of the fresh ingredients.
  5. Combine Thoroughly: Stir the entire mixture well until all ingredients are evenly combined. Adjust seasoning if needed. Serve the Pico de Gallo with tortilla chips, on tacos, or alongside other Mexican dishes and enjoy immediately for the freshest flavor.

Notes

  • Use fresh, ripe tomatoes for the best flavor and texture.
  • If you don't like bell pepper, you can omit it or substitute with jalapeño for spice.
  • Fresh cilantro is preferred over dried for maximum flavor.
  • Allow the Pico de Gallo to rest for 10-15 minutes before serving to let flavors meld together if desired.
  • This recipe can be stored in the refrigerator for up to 2 days but is best enjoyed fresh.
