A quick and easy protein-packed mug cake that cooks in just over a minute. This recipe combines oat flour, vanilla protein powder, and a touch of sweetness to create a warm, satisfying treat. Perfect for a speedy breakfast, post-workout snack, or anytime dessert, it is customizable with milk options and chocolate chips for extra indulgence.

Ingredients

Dry Ingredients

  • ¼ cup oat flour (spooned & leveled)
  • 2 tbsp vanilla protein powder
  • ½ tsp baking powder
  • 1 tbsp coconut sugar

Wet Ingredients

  • ¼ cup milk (oat, almond, or cow’s milk)
  • ½ tsp vanilla extract

Optional Add-ins

  • 2 tbsp mini chocolate chips (or regular sized)

Instructions

  1. Mix the dry ingredients: In a microwave-safe ramekin or mug, combine the oat flour, vanilla protein powder, coconut sugar, and baking powder. Stir them thoroughly to ensure even distribution of all dry components.
  2. Add the wet ingredients: Pour in the milk and vanilla extract. Whisk the mixture until smooth and free of lumps, creating a consistent batter.
  3. Stir in chocolate chips: Fold the mini chocolate chips into the batter evenly. Optionally, sprinkle extra chips on top for added chocolate flavor.
  4. Microwave the mug cake: Place the mug or ramekin in the microwave and cook on high for 60 to 75 seconds. Check at 50 seconds to prevent overcooking; if the cake still appears wet, continue microwaving in 10-second intervals until it sets properly.
  5. Serve and enjoy: Allow the mug cake to cool slightly, then serve immediately while warm for the best texture and flavor.

Notes

  • Cooking times may vary depending on your microwave's wattage; watch closely to avoid overcooking.
  • Oat flour can be substituted with other flours but may affect texture and taste.
  • Use your preferred milk type to make this recipe dairy-free or vegan-friendly.
  • Chocolate chips are optional but add a delicious sweet contrast.
  • For a lower sugar version, reduce or omit the coconut sugar.
