Ingredients

Beef and Vegetables

  • 1 pound top sirloin steak
  • 2 tablespoons olive oil, divided
  • 3 cups broccoli florets

Sauce Ingredients

  • 1/2 cup water
  • 1/2 teaspoon apple cider vinegar
  • 1/2 cup soy sauce
  • 1/4 cup packed brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon ground ginger

Instructions

  1. Prepare Ingredients: Trim any fat from the top sirloin steak and slice it thinly across the grain into bite-sized pieces. Whisk together all sauce ingredients—water, apple cider vinegar, soy sauce, brown sugar, cornstarch, minced garlic, sesame oil, and ground ginger—in a bowl until thoroughly combined.
  2. Cook Broccoli: Heat 1 tablespoon of olive oil in a large skillet over high heat until shimmering. Add the broccoli florets and cook, stirring frequently, for 4-5 minutes until they are tender-crisp. Transfer the broccoli to a plate and set aside.
  3. Sear the Beef: Add the remaining 1 tablespoon of olive oil to the skillet. Spread the beef in a single layer and let it sear undisturbed for 1 minute. Use tongs to stir and flip the strips and cook for another minute, aiming for a slightly rare interior to keep the meat tender.
  4. Combine and Thicken Sauce: Return the broccoli to the skillet with the seared beef. Pour the prepared sauce over the ingredients. Stir and toss constantly until the sauce thickens and everything is well-coated, about 1-3 minutes.
  5. Serve Immediately: Remove the skillet from heat and serve the beef and broccoli hot for best flavor and texture.

Notes

  • Cutting the beef thinly against the grain ensures tenderness.
  • Do not overcook the beef; slight pinkness helps maintain juiciness.
  • Broccoli should be crisp-tender to add pleasant texture contrast.
  • Use low-sodium soy sauce to reduce sodium content if preferred.
  • Serve with steamed rice or noodles for a complete meal.
