Quick and Easy Crab Melts are a savory and satisfying appetizer or light meal that combines tender white crab meat with mustard, red pepper, and celery, topped with bubbling Monterey Jack or Swiss cheese on toasted baguette slices. Ready in just 25 minutes, this recipe is perfect for a delicious seafood treat with minimal effort.

Ingredients

Crab Mixture

  • ½ cup white crab meat
  • 1 tsp Dijon mustard
  • 2 tablespoons finely chopped red pepper
  • 1 tablespoon finely chopped celery
  • 2 tablespoons crème fraîche or sour cream (low fat is fine)
  • Salt and pepper to taste

Assembly

  • 4 slices of Monterey Jack cheese or Swiss cheese (or Pepper Jack for a bit of spice)
  • One 4 or 5 inch slice of baguette or 2 or 3 pieces of sliced bread

Instructions

  1. Toast the Bread: Place the French bread or ciabatta bread halves on a baking sheet and put them in an oven preheated to 350°F (175°C) or under the broiler/grill. Toast for about 5 minutes or until the bread starts to take on a light golden color.
  2. Prepare the Crab Mixture: While the bread is toasting, combine the crab meat, Dijon mustard, finely chopped red pepper, and finely chopped celery in a mixing bowl.
  3. Season the Mixture: Add the crème fraîche or sour cream along with salt and pepper to taste. Mix gently to combine all ingredients without breaking up the crab meat too much.
  4. Assemble the Crab Melts: Spoon the crab mixture evenly over the toasted bread slices. Top each piece generously with slices of Monterey Jack or Swiss cheese.
  5. Melt the Cheese: Return the crab-topped bread to the oven or place under the broiler/grill for 5 to 10 minutes until the cheese is bubbling and golden brown.
  6. Cool and Serve: Allow the crab melts to cool slightly before serving, as the cheese will be very hot. Serve each person one half of the bread or cut into small pieces as appetizers.

Notes

  • You can substitute Pepper Jack cheese for a spicier version of the crab melts.
  • Using low-fat crème fraîche or sour cream keeps the dish lighter without sacrificing creaminess.
  • If you don't have a broiler, a 350°F oven will do the job; just keep an eye on the bread and cheese to prevent burning.
  • Serve these crab melts as a quick lunch, snack, or elegant hors d’oeuvres for gatherings.
