This Quick Oven Roasted Tomatoes recipe features halved Campari tomatoes tossed with garlic, fresh thyme, sumac, chili flakes, and olive oil, then roasted until tender and flavorful. A simple and vibrant side dish or topping that can be enjoyed warm or at room temperature, optionally garnished with crumbled feta cheese for added richness.

Ingredients

Tomatoes

  • 2 lb smaller tomatoes, halved (Campari tomatoes recommended)

Seasonings

  • 2 to 3 garlic cloves, minced
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 tsp fresh thyme, stems removed
  • 1 tsp sumac
  • 1/2 tsp dry chili pepper flakes

Others

  • Extra virgin olive oil, about 1/4 cup or more
  • Crumbled feta cheese (optional, for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 450 degrees Fahrenheit to get it ready for roasting the tomatoes.
  2. Prepare and Season Tomatoes: Place the halved tomatoes into a large mixing bowl. Add minced garlic, kosher salt, black pepper, fresh thyme, sumac, and dry chili flakes. Drizzle generously with about 1/4 cup of quality extra virgin olive oil, then toss everything to ensure the tomatoes are well coated with the seasoning and oil.
  3. Arrange on Baking Sheet: Transfer the seasoned tomatoes to a rimmed baking sheet. Lay them out flesh side up in a single layer to allow even roasting.
  4. Roast the Tomatoes: Place the baking sheet in the preheated oven and roast for 30 to 35 minutes, or until the tomatoes have softened and collapsed to your preferred doneness, releasing their natural sweetness.
  5. Finish and Serve: Remove the roasted tomatoes from the oven. If serving immediately, garnish with extra fresh thyme and a sprinkle of crumbled feta cheese for a creamy, tangy finish. Serve warm or at room temperature.

Notes

  • You can use other small tomato varieties like cherry or grape tomatoes if Campari are unavailable.
  • Adjust chili flakes based on your desired spice level or omit if you prefer no heat.
  • Roasting time may vary slightly depending on your oven and tomato size.
  • Leftover roasted tomatoes can be refrigerated for up to 3 days and used as a topping for salads, pastas, or bruschetta.
  • Feta cheese is optional but adds a nice creamy contrast to the sweet and tangy roasted tomatoes.
