Ingredients

Crust and Base

  • 1 cup salted butter (2 sticks, softened)
  • 1 cup sugar
  • 1 large egg
  • ¼ cup lemon juice
  • 1 Tbsp lemon zest
  • 2 ⅓ cups flour
  • ½ tsp baking soda
  • 1 ¼ cups raspberries (fresh)
  • 1 tsp vanilla extract

Glaze

  • 1 ¼ cups powdered sugar
  • 2-3 Tbsp lemon juice
  • ½ cup raspberries (chopped, do not puree)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F and line a 9x9-inch baking dish with parchment paper to ensure easy removal of the bars.
  2. Mix Butter and Sugar: In a large bowl, combine the softened butter and sugar, mixing until the mixture becomes creamy and fluffy, providing a light texture to the crust.
  3. Add Egg and Lemon: Beat in the egg until fully combined, then add the lemon juice and lemon zest, mixing thoroughly to infuse bright citrus flavor.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour and baking soda to evenly distribute the leavening agent.
  5. Incorporate Dry into Wet: Gradually add the dry flour mixture to the wet mixture, stirring gently to combine but avoid overmixing to maintain tenderness.
  6. Fold in Raspberries: Carefully fold in the raspberries using a rubber spatula to keep them intact and distribute evenly throughout the batter.
  7. Transfer Batter to Pan: Pour and spread the batter evenly into the prepared baking dish, smoothing the top for uniform baking.
  8. Bake: Bake at 350°F for 40-45 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  9. Cool: Allow the bars to cool completely in the pan, which helps the structure to set before glazing.
  10. Prepare Glaze: In a large bowl, whisk together the powdered sugar and lemon juice until smooth and glossy.
  11. Add Raspberries to Glaze: Gently fold the chopped raspberries into the glaze, taking care not to break them up.
  12. Apply Glaze: Spread the raspberry lemon glaze evenly over the cooled bars and let it harden for 10-15 minutes.
  13. Slice and Serve: Cut into 12 uniform bars and serve, enjoying the perfect balance of tartness and sweetness.

Notes

  • Use fresh raspberries for best flavor and texture; frozen raspberries may release too much moisture.
  • Lemon juice can be adjusted to taste, but ensure to balance so it does not overpower the sweetness.
  • Ensure the bars are completely cooled before glazing to prevent the glaze from melting.
  • For easier slicing, chill bars in the refrigerator after glazing.
  • These bars can be stored in an airtight container in the refrigerator for up to 5 days.
