Ingredients

Pistachio Clusters

  • ½ tablespoon butter
  • ½ cup roasted, salted pistachios
  • 2 to 3 tablespoons honey

Salad

  • 6 to 8 cups baby arugula greens
  • Kosher salt and pepper, to taste
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • ½ cup blackberries
  • ½ cup red raspberries
  • Crumbled goat cheese, for topping (approximately 3 to 4 tablespoons)

Goat Cheese Vinaigrette Dressing

  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon chopped chives
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Kosher salt and pepper, to taste
  • ½ cup olive oil
  • 3 to 4 tablespoons crumbled goat cheese

Instructions

  1. Prepare the Pistachio Clusters: Melt the butter in a skillet over medium heat. Add the roasted, salted pistachios and stir to coat. Pour in 2 to 3 tablespoons of honey and toss well to combine. Cook the mixture until it begins to simmer, about 2 to 3 minutes, stirring continuously to prevent burning. Pour the honey-glazed pistachios onto a sheet of parchment paper and allow them to cool completely.
  2. Assemble the Salad: In a large bowl, toss the baby arugula greens with a pinch of kosher salt and freshly ground black pepper. Add the sliced strawberries, blueberries, blackberries, and red raspberries to the greens and gently toss until all ingredients are evenly distributed.
  3. Chop the Pistachio Clusters: Once the pistachio clusters have cooled, coarsely chop them into bite-sized pieces. Sprinkle the chopped pistachio clusters evenly over the berry and arugula salad. Add additional crumbled goat cheese on top, if desired.
  4. Make the Goat Cheese Vinaigrette: In a bowl, whisk together the red wine vinegar, fresh lemon juice, minced garlic, chopped chives, honey, Dijon mustard, and a pinch of kosher salt and black pepper. Slowly stream in the olive oil while continuously whisking to emulsify the dressing. Stir in 3 to 4 tablespoons of crumbled goat cheese and continue mixing until the dressing is creamy. The dressing can also be shaken in a jar for easier emulsification. Store any leftover dressing in the refrigerator and use within 1 to 2 days.
  5. Dress and Serve: Drizzle the creamy goat cheese vinaigrette over the salad just before serving. Toss gently to coat the salad evenly and serve immediately to enjoy the fresh, vibrant flavors.

Notes

  • Use fresh, ripe berries for the best flavor and texture.
  • Adjust the amount of honey in the pistachio clusters to your preferred sweetness level.
  • This salad is best served fresh but can be prepped ahead by making the pistachio clusters and dressing in advance.
  • For a nut-free version, omit pistachios and substitute with toasted seeds.
  • The vinaigrette dressing can be stored refrigerated for up to 2 days.
