Delicious and vibrant Roasted Cabbage Steaks topped with a zesty and spicy lime-cilantro sauce. This recipe combines crispy, caramelized cabbage with a bold dressing that enhances its natural flavors, making it a perfect vegetarian side dish or light main course.

Ingredients

Cabbage Steaks

  • 1 head of green cabbage
  • 1/4 cup unsalted butter, divided (or avocado oil if vegan)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste (or roasted garlic)
  • Lime wedges, for garnish

Spicy Lime and Cilantro Sauce

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon fish sauce (omit if vegan)
  • 2 teaspoons minced garlic
  • 1/4 cup chopped cilantro leaves
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon brown sugar

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for roasting the cabbage steaks to a perfect caramelized texture.
  2. Slice the cabbage: Remove the core and cut the head of cabbage vertically into 1/2-inch-thick steaks, ensuring even thickness for consistent cooking.
  3. Sear the cabbage steaks: Melt 1 tablespoon of butter or heat 1 tablespoon of avocado oil in a cast-iron skillet over medium-high heat. Add 1 or 2 cabbage steaks depending on skillet size; season lightly with salt, black pepper, and garlic powder. Cook each side for 3 to 4 minutes until nicely browned and slightly tender.
  4. Prepare for roasting: Transfer the seared cabbage steaks to a baking sheet lined with parchment paper, placing them seared side up in a single layer. Repeat searing with remaining cabbage steaks, adding more butter or oil as needed.
  5. Bake the cabbage: Roast the cabbage steaks in the preheated oven for 15 to 20 minutes until tender and caramelized around the edges.
  6. Make the sauce: While the cabbage roasts, whisk together the olive oil, fresh lime juice, fish sauce (if using), minced garlic, chopped cilantro, sea salt, cayenne pepper, and brown sugar in a small bowl until fully combined.
  7. Dress and serve: Once the cabbage steaks are cooked, transfer to serving plates, drizzle generously with the spicy lime and cilantro sauce, and garnish with fresh lime wedges. Serve immediately and enjoy!

Notes

  • For a vegan version, substitute butter with avocado oil and omit the fish sauce in the dressing.
  • The thickness of the cabbage steaks affects cooking time; adjust roasting time slightly if needed.
  • Use a heavy skillet like cast-iron for best searing results.
  • If you prefer a milder sauce, reduce the cayenne pepper to taste.
  • Leftover roasted cabbage can be refrigerated for up to 3 days and reheated gently.
