Ingredients

Chicken Wings

  • 3 lbs chicken wings
  • ¼ cup olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp granulated garlic
  • 1 tbsp kosher salt

Buffalo Sauce

  • 1 (12 oz) bottle mild or hot buffalo sauce
  • ¼ cup honey, plus more to drizzle
  • 4 tbsp butter
  • 1 tbsp apple cider vinegar

Garnish and Serving

  • 4 green onions, thinly sliced
  • 2 tbsp chopped parsley
  • Ranch or blue cheese dressing, for serving

Instructions

  1. Marinate the wings: In a large mixing bowl, combine chicken wings, olive oil, smoked paprika, granulated garlic, and kosher salt. Toss thoroughly to coat the wings evenly. Let them marinate at room temperature for 30 minutes to develop flavor.
  2. Preheat and prepare the oven: Preheat your oven to 450°F (232°C). Line a half-sheet pan with parchment paper and place a baking rack on top to allow air circulation around the wings for crispiness.
  3. Roast the wings - first phase: Arrange the marinated wings in an even layer on the prepared rack. Roast them in the oven at 450°F for 15 minutes, allowing them to start crisping up.
  4. Continue roasting - second phase: Lower the oven temperature to 400°F (204°C) and bake the wings for an additional 15 to 20 minutes, or until they turn golden brown and are cooked through.
  5. Prepare the honey buffalo sauce: While the wings roast, combine buffalo sauce, honey, butter, and apple cider vinegar in a small saucepan over low heat. Warm the mixture gently until the butter melts, whisking until fully incorporated. Remove from heat and set aside.
  6. Toss wings with sauce and garnish: Once wings are done, transfer them to a large bowl and toss with the prepared honey buffalo sauce, sliced green onions, and chopped parsley for fresh flavor and color.
  7. Serve immediately: Plate the wings and drizzle additional honey over the top if desired. Serve them hot with a side of ranch or blue cheese dressing for dipping.

Notes

  • Marinating at room temperature helps infuse the flavors but avoid leaving chicken out longer than 30 minutes to ensure food safety.
  • Using a baking rack is key for crispy wings as it allows hot air to circulate underneath.
  • Adjust the amount of honey and buffalo sauce according to your preferred balance of heat and sweetness.
  • If you want extra crispy wings, broil them for 1-2 minutes at the end of cooking while watching carefully to avoid burning.
  • Serve immediately for best texture; leftovers can be reheated in an oven or air fryer to retain crispiness.
