Ingredients
Vegetables
1 small green cabbage
1 small yellow onion
2 garlic cloves, minced
Fats & Seasoning
2 tablespoons ghee (or a blend of butter and olive oil)
Kosher salt, to taste
Ground black pepper, to taste
Instructions
Slice the cabbage and onion: Cut the cabbage in half, then into quarters. Remove the cores from each quarter and chop thinly across. Slice the onion in half and then thinly across.
Cook the onions: Melt the ghee in a large skillet over medium-high heat. Add the sliced onions and sauté for about 1 minute, or until they start to soften. Stir in the minced garlic and cook briefly to release its aroma.
Sauté the cabbage: Add the sliced cabbage to the skillet. Cook for 12 to 15 minutes, stirring occasionally, until the cabbage softens and starts to caramelize, developing a rich, slightly sweet flavor.
Finish and serve: Season the sautéed cabbage with kosher salt and ground black pepper to taste. Toss everything together well and serve warm as a flavorful, healthy side dish.
Notes
You can substitute ghee with butter or olive oil if preferred.
For a vegan option, use olive oil instead of ghee or butter.
Cooking time may vary slightly depending on the heat and thickness of cabbage slices.
Adding a splash of apple cider vinegar or lemon juice at the end enhances the flavor with a bright tang.
This dish pairs excellently with grilled meats, roasted vegetables, or grains like quinoa or rice.
