These Savory Cottage Cheese Breakfast Muffins combine lean turkey sausage, fresh vegetables, and creamy cottage cheese into a deliciously moist and protein-packed muffin. Perfect for a hearty breakfast or brunch, they are easy to prepare and bake to golden perfection with a cheesy topping.

Ingredients

Meat

  • 1 lb turkey breakfast sausages (removed from the casing)

Wet Ingredients

  • 4 eggs
  • ¼ cup milk
  • 1 cup 2% cottage cheese
  • 1 tbsp olive oil
  • 1 tbsp maple syrup

Dry Ingredients

  • 1.5 cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt

Vegetables & Cheese

  • 3 cups chopped vegetables (broccoli, spinach, etc.)
  • 3 green onions (greens and whites sliced finely)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it's hot and ready for baking the muffins.
  2. Cook Sausages: Remove the turkey sausages from their casing and cook them in a medium skillet over medium-high heat until browned and no longer pink in the center. Once cooked, set aside and allow the sausage meat to cool slightly.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, 2% cottage cheese, olive oil, and maple syrup until combined thoroughly, creating a creamy base for the batter.
  4. Add Dry Ingredients: To the same bowl, add the all-purpose flour, baking powder, and salt. Mix well with a wooden spoon or silicone spatula until the batter is smooth and evenly incorporated.
  5. Combine Add-ins: Fold in the cooked sausage meat, chopped vegetables such as broccoli and spinach, sliced green onions, and shredded cheddar cheese. Reserve some cheese to sprinkle on top of the muffins later for a golden finish.
  6. Fill Muffin Tin: Divide the batter evenly among 12 muffin cavities, roughly 4 heaping tablespoons or one heaping ¼ cup per muffin. Top each with the reserved shredded cheddar cheese for a lovely crust.
  7. Bake: Place muffins in the preheated oven and bake for 23-27 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Notes

  • Feel free to substitute vegetables based on preference or seasonality, such as bell peppers or mushrooms.
  • For extra flavor, you can add herbs like thyme or parsley to the batter.
  • Make sure cooked sausage is cooled to prevent the eggs from scrambling during mixing.
  • These muffins can be refrigerated for up to 3 days or frozen for longer storage.
  • Reheat in the oven or microwave until warmed through before serving.
