This Savory Sweet Potato Toast recipe offers a delicious and nutritious gluten-free and dairy-free alternative to traditional bread toast. Made with thin slices of sweet potato air-fried or baked until golden and crisp, topped with creamy avocado, perfectly cooked eggs, and fresh microgreens, it’s a wholesome breakfast or snack that’s quick to prepare and packed with flavor.

Ingredients

Sweet Potato Toast

  • 1 medium sweet potato
  • 1 tablespoon olive oil
  • Salt and ground black pepper to taste

Toppings

  • 2 eggs
  • 1 ripe avocado
  • Microgreens or sprouts (for topping)

Instructions

  1. Slice Sweet Potatoes: Wash the sweet potato (optional to remove the skin). Slice the sweet potato lengthwise into 1/4-inch-thick pieces, roughly the size of a toast slice.
  2. Brush with Oil & Season: Lightly brush both sides of each sweet potato slice with olive oil and season with salt and ground black pepper to your taste.
  3. Preheat & Line: Preheat your air fryer or oven to 400°F (200°C). If using the oven, line a baking sheet with parchment paper to prevent sticking.
  4. Cook Sweet Potato Slices: Arrange sweet potato slices in a single layer in the air fryer basket or on the prepared baking sheet. Cook for 15 minutes, flipping halfway through, until the sweet potatoes are golden brown and slightly crisp around the edges.
  5. Prepare the Toppings: While the sweet potatoes cook, prepare your toppings: cook the eggs to your preferred style (fried, poached, or scrambled), slice the avocado, and season the avocado slices with salt and black pepper.
  6. Garnish & Serve: Once the sweet potato slices are cooked, let them cool slightly. Top each slice with avocado and egg, then garnish with microgreens or sprouts for a fresh, crunchy finish. Serve immediately.

Notes

  • For a crispier texture, slice the sweet potato thinner, about 1/8 inch thick.
  • You can customize toppings with other ingredients like hummus, smoked salmon, tomatoes, or vegan cheese for variety.
  • Ensure the slices are in a single layer to cook evenly and achieve the desired crispiness.
  • Sweet potatoes may vary in size; adjust cooking time accordingly if your slices are thicker or thinner.
  • If using the oven, you may need to rotate the baking sheet halfway through cooking for even browning.
