This Seared Blackened Salmon recipe offers a flavorful, spicy crust on perfectly cooked salmon fillets, ideal for a quick and elegant meal for two. The salmon is seasoned with a blend of smoky and aromatic spices, seared to create a blackened crust, then finished in the oven to ensure a tender, juicy interior.

Ingredients

Salmon

  • 2 6-ounce salmon fillets

Seasoning

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon chili powder

Cooking Oil

  • 1 tablespoon + 1 teaspoon avocado oil

Optional Garnish

  • Lemon wedges
  • Fresh herbs

Instructions

  1. Prep the salmon: Remove any bones from the salmon fillets to prepare them for seasoning and cooking.
  2. Make the spice mixture: In a small bowl, combine kosher salt, black pepper, onion powder, garlic powder, smoked paprika, dried oregano, and chili powder to create the blackening seasoning.
  3. Season the salmon: Coat the salmon fillets with 1 teaspoon of avocado oil, then generously sprinkle the spice mixture onto the flesh side of each fillet. Use your fingers to gently press the spices to ensure they adhere well.
  4. Heat the skillet: Place an oven-safe skillet over medium heat and add 1 tablespoon of avocado oil. Heat until the oil is hot and shimmering.
  5. Sear the salmon: Place the salmon fillets skin side up (flesh side down) in the hot skillet and sear for about 3 minutes until the spices blacken and the fillets release easily from the pan.
  6. Finish in the oven: Carefully flip the fillets over and transfer the skillet to a preheated oven. Bake for 5-8 minutes depending on the thickness of the fillets, until the salmon is cooked through.
  7. Brush with oil: Remove the skillet from the oven and brush the salmon fillets with some of the remaining avocado oil from the pan to add moisture and shine.
  8. Serve: Plate the salmon immediately with lemon wedges and fresh herbs if desired, and enjoy your perfectly blackened, flavorful salmon.

Notes

  • Ensure the skillet is oven-safe before transferring to the oven.
  • Adjust oven cooking time according to the thickness of the salmon fillets to avoid overcooking.
  • Use fresh lemon and herbs for a bright contrast to the smoky spices.
  • Bone removal is important for easier eating and better presentation.
  • Avocado oil is chosen for its high smoke point, ideal for searing.
