This quick and easy dish is perfect for a light lunch or dinner with a delicious Asian-inspired flair.

Ingredients

Sesame Dressing

  • ¼ cup rice vinegar
  • 2 tablespoons tamari or soy sauce, plus more for serving
  • ½ teaspoon toasted sesame oil, plus more for serving
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, grated
  • ½ teaspoon maple syrup or honey

Soba Noodles and Toppings

  • 6 ounces soba noodles
  • Lemon wedge, for squeezing
  • 2 avocados, sliced
  • 2 cups blanched snap peas
  • ¼ cup edamame
  • 1 watermelon radish, or 2 red radishes, very thinly sliced
  • ¼ cup fresh mint leaves
  • Sesame seeds, for garnish

Instructions

  1. Make the dressing: In a small bowl, whisk together rice vinegar, tamari or soy sauce, toasted sesame oil, grated fresh ginger, grated garlic clove, and maple syrup or honey until well combined. Set aside to allow the flavors to meld.
  2. Cook the soba noodles: Bring a large pot of unsalted water to a rolling boil. Add the soba noodles and cook according to the package instructions, usually around 5-7 minutes, until tender but still firm. Drain the noodles and rinse thoroughly under cold water to remove excess starch and prevent them from clumping together.
  3. Toss noodles with dressing: Place the cooled soba noodles in a large bowl and pour the prepared sesame dressing over them. Toss gently to coat the noodles evenly with the dressing.
  4. Assemble the bowls: Divide the dressed soba noodles evenly into 2 to 4 serving bowls. Squeeze fresh lemon juice over sliced avocados and add them to each bowl along with blanched snap peas, edamame, thinly sliced radishes, and fresh mint leaves.
  5. Garnish and serve: Sprinkle each bowl with sesame seeds for added texture and flavor. Drizzle extra tamari or toasted sesame oil on top if desired. Serve immediately for best freshness and flavor.

Notes

  • Rinsing the soba noodles under cold water after cooking is crucial to prevent them from sticking together and to remove excess starch.
  • Blanch snap peas by briefly boiling them for 1-2 minutes until bright green and crisp-tender, then plunge into ice water to retain color and crunch.
  • This recipe is easily customizable; feel free to add other vegetables like shredded carrots or cucumber slices.
  • For a vegan option, ensure the maple syrup is used instead of honey.
  • Leftovers can be stored in the refrigerator for up to 2 days but are best enjoyed fresh as the noodles may become soft over time.
