Ingredients

Meat Mixture

  • 1 tablespoon olive oil
  • 1¼ pound lean ground beef
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes
  • 2 tablespoon Worcestershire sauce
  • 1.9 ounce onion soup mix (55g, e.g., Knorr)
  • 1 cup low sodium beef broth
  • 2 cups frozen mixed veggies (peas, carrots, green beans, corn)

Mashed Potatoes

  • 6 large potatoes, peeled and cut into cubes
  • 4 tablespoon butter, softened
  • ½ cup milk
  • ¼ cup Parmesan cheese
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon white pepper (or to taste)

Garnish

  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Boil the Potatoes: Begin by placing the peeled and cubed potatoes into boiling water and cook for about 15 minutes or until they are fork tender. This ensures they are soft enough for mashing.
  2. Prepare the Meat Mixture: While the potatoes are boiling, heat olive oil in a large skillet over medium heat. Add the ground beef, seasoning it with salt and black pepper. Cook the beef for approximately 5 minutes, stirring and breaking up the meat, until it is no longer pink.
  3. Add Aromatics and Seasonings: To the cooked beef, add the chopped onion and minced garlic. Cook for another 3 minutes until the onion becomes soft and translucent. Stir in red pepper flakes, Worcestershire sauce, onion soup mix, and beef broth. Mix well.
  4. Add Vegetables: Incorporate the frozen vegetable mix into the skillet and cook for an additional few minutes until heated through. Set the skillet aside once done.
  5. Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking the assembled pie.
  6. Mash the Potatoes: Drain the cooked potatoes and transfer them to a large bowl. Add softened butter and use a potato masher to mash until smooth. Then add milk, Parmesan cheese, salt, and white pepper. Mash again until the mixture is creamy and well combined.
  7. Assemble the Shepherd's Pie: Spread the mashed potatoes evenly over the meat and vegetable mixture in the skillet. Smooth the top with a spoon and use a fork to roughen the surface to create texture for browning.
  8. Bake: Place the skillet on a baking sheet to catch any drips, then transfer it to the preheated oven. Bake for 40 minutes until the mashed potato topping is golden brown and the filling is bubbly.
  9. Garnish and Serve: Remove the skillet from the oven and sprinkle fresh chopped parsley over the top. Serve warm for a comforting meal.
