Ingredients

Vegetables

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrot
  • 4 cups chopped green cabbage (approx. ¼ head of cabbage)
  • 2 ribs celery, chopped
  • 1 cup green beans, chopped into 1 inch pieces
  • 2 bell peppers (red, green, or orange), chopped
  • 2 cups chopped fresh spinach

Liquids & Canned Goods

  • 28 ounces canned diced tomatoes
  • 6 cups low sodium vegetable broth or chicken broth

Seasonings & Herbs

  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 ½ teaspoons Italian seasoning
  • Black pepper, to taste
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil

Instructions

  1. Combine Vegetables: Add the diced onion, minced garlic, diced carrot, chopped cabbage, chopped celery, green beans, and chopped bell peppers into a large crock pot.
  2. Add Liquids and Seasonings: Pour in the canned diced tomatoes, vegetable or chicken broth, then add the tomato paste, bay leaves, Italian seasoning, and black pepper. Stir everything together well to combine the ingredients evenly.
  3. Cook Soup: Cover the crock pot and cook the soup on high for 5 hours or on low for 8 hours, allowing all the vegetables and flavors to meld perfectly over time.
  4. Add Fresh Herbs and Spinach: Once the soup has cooked, stir in the chopped fresh parsley, basil, and spinach. Cover and cook for an additional 5 minutes to wilt the spinach and infuse the fresh herbs into the soup.

Notes

  • For a vegetarian version, use vegetable broth; for added richness, chicken broth can be used.
  • Adjust the cooking time based on your slow cooker’s heat settings as they can vary.
  • Feel free to swap out green beans for zucchini or other seasonal vegetables.
  • Remove bay leaves before serving to avoid a bitter taste.
  • This soup freezes well for up to 3 months; reheat gently on the stove.
