Ingredients

Crust

  • 1½ cups cinnamon graham cracker crumbs
  • ½ cup (1 stick) salted butter, melted

Cheesecake Layer

  • 8 ounce package cream cheese, softened
  • ½ cup granulated white sugar
  • 8 ounce container whipped topping
  • ¾ cup marshmallow cream

Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy whipping cream

Toppings

  • ¾ cup mini marshmallows
  • ½ cup cinnamon graham crackers, roughly chopped
  • ½ cup Hershey chocolate bars, roughly chopped

Instructions

  1. Prepare the pan: Spray a 9x9 inch baking pan with cooking spray or line it with parchment paper to prevent sticking.
  2. Make the crust: In a medium bowl, mix cinnamon graham cracker crumbs with melted butter until fully combined. Press this mixture firmly into the bottom of the prepared pan to form an even crust layer. Chill in the refrigerator while preparing the next steps.
  3. Prepare the cheesecake filling: Using a stand or hand mixer, beat the softened cream cheese and granulated sugar together in a medium bowl until smooth and creamy, about 2-3 minutes.
  4. Add marshmallow mixture: Beat in the whipped topping and marshmallow cream until the filling is well combined and fluffy.
  5. Assemble cheesecake layer: Evenly spread the cheesecake filling over the chilled graham cracker crust layer. Place the pan back in the refrigerator to chill.
  6. Make the chocolate ganache: Place semi-sweet chocolate chips in a heat-proof bowl. Heat the heavy whipping cream in a medium saucepan over medium heat until bubbles form around the edges; do not boil.
  7. Combine ganache: Pour the hot cream over the chocolate chips and let sit for 3 minutes, then stir until smooth and fully melted.
  8. Top the bars: Remove cheesecake bars from the refrigerator and pour the chocolate ganache evenly over the top.
  9. Add toppings: Sprinkle mini marshmallows, chopped cinnamon graham crackers, and chopped Hershey’s chocolate bars over the ganache layer.
  10. Optional toasting: To lightly toast the marshmallows, place the pan under the broiler for about 1 minute or until golden brown, watching carefully to prevent burning.
  11. Chill to set: Refrigerate the bars for at least 2 hours or until completely firm.
  12. Serve: Cut into bars and serve cold. Enjoy your indulgent s'mores cheesecake bars!

Notes

  • For an even easier cleanup, line the baking pan with parchment paper with overhang to lift bars out easily.
  • Keep the bars refrigerated until serving as they soften at room temperature.
  • Broiling the marshmallows is optional but adds a lovely toasted flavor and texture.
  • You can substitute Hershey's chocolate bars with any milk chocolate bar you prefer.
  • Use full-fat cream cheese and heavy cream for the best texture and flavor.
