A flavorful and spicy twist on classic deviled eggs, featuring a creamy filling made with mayonnaise, Dijon mustard, Sriracha, and cayenne pepper for a perfect kick. These spicy deviled eggs are easy to prepare, chilled to perfection, and garnished with green onions and extra cayenne for added zest.

Ingredients

Eggs

  • 6 large eggs

Filling

  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Sriracha
  • 1/8 teaspoon cayenne pepper (plus more for garnish)
  • Salt and pepper to taste

Garnish

  • Green onions, thinly sliced

Instructions

  1. Boil eggs: Bring a pot of water to a boil. Reduce the heat to low or turn it off to stop the boiling, then carefully place the eggs into the water using a skimmer. Turn the heat back to high and set a timer for 14 minutes to cook the eggs thoroughly.
  2. Prep ice bath: While the eggs are boiling, prepare a bowl with ice water and set it aside to chill the eggs later.
  3. Chill eggs: After 14 minutes, remove the eggs from the boiling water using the skimmer and immediately place them in the ice water bath to stop the cooking process and cool them completely.
  4. Peel and slice: Once cooled, gently peel the eggs and slice each one in half lengthwise. Carefully scoop out the yolks into a small mixing bowl, and arrange the egg white halves on a serving plate.
  5. Make filling: To the bowl with egg yolks, add mayonnaise, Dijon mustard, Sriracha, cayenne pepper, salt, and pepper. Stir or blend until the mixture is smooth and creamy.
  6. Fill eggs: Spoon the spicy yolk filling back into the hollowed egg whites. Garnish each deviled egg with a light sprinkle of cayenne pepper and some thinly sliced green onions for freshness and color.

Notes

  • Using an ice bath immediately after boiling helps achieve easier peeling and prevents overcooking.
  • Adjust the amount of Sriracha and cayenne pepper to control the spice level to your preference.
  • For extra smooth filling, use a hand blender or food processor instead of stirring by hand.
  • These deviled eggs can be made a few hours ahead and stored covered in the refrigerator.
