Ingredients

Base Ingredients

  • 2 tablespoons olive oil
  • half an onion, diced
  • 1 jalapeño, minced
  • 2 cloves garlic, minced
  • 3 large sweet potatoes, peeled and cubed

Liquids & Canned Goods

  • one 14-ounce can fire roasted tomatoes
  • one 14-ounce can light coconut milk
  • 2 cups water

Spices & Nuts

  • 1 teaspoon salt
  • 1 teaspoon curry and/or turmeric
  • 1/2 cup chopped peanuts
  • 1/4 cup peanut butter

Greens

  • 1-2 cups kale, stems removed, chopped

Instructions

  1. Sauté Aromatics: Heat the olive oil in a large soup pot over medium heat and add the diced onion, minced garlic, and jalapeño. Sauté for several minutes until the mixture is soft and fragrant, building the flavor base.
  2. Brown Sweet Potatoes: Add the peeled and cubed sweet potatoes to the pot. Brown them slightly with the aromatics to develop deeper, richer flavors in the soup.
  3. Add Liquids and Simmer: Stir in the fire roasted tomatoes, light coconut milk, water, salt, curry and/or turmeric, and chopped peanuts. Bring the mixture to a simmer and cook until the sweet potatoes are fork-tender, about 15-20 minutes.
  4. Finish Soup: Stir in the peanut butter and chopped kale. Continue simmering until the soup is thick, creamy, and the kale is tender but still vibrant. Adjust seasoning if needed.
  5. Serve: Ladle the soup into bowls and optionally top with extra chopped peanuts and cilantro for added texture and freshness.

Notes

  • Adjust jalapeño quantity to control the spice level.
  • Use light coconut milk for a lower-fat option.
  • Fire roasted tomatoes add smoky depth but plain diced tomatoes can be substituted.
  • Simmer gently to avoid burning the peanut butter.
  • Leftover soup stores well refrigerated for 3-4 days.
