This creamy and flavorful Spinach Queso Dip combines light cream cheese, sour cream, jalapenos, and fresh baby spinach with a zesty Mexican blend cheese and diced tomatoes with green chilies. It’s baked to perfection, making it a perfect warm appetizer for parties or casual gatherings, served alongside crunchy tortilla chips.

Ingredients

Dairy and Cream

  • 8 ounces light cream cheese (softened)
  • ⅓ cup sour cream
  • 12 ounces Mexican blend shredded cheese

Vegetables and Herbs

  • ¼ cup yellow onion (chopped)
  • 1 medium jalapeno (seeds removed and minced)
  • 5 ounces fresh baby spinach (washed and dried)
  • 20 ounces canned diced tomatoes with green chilies (slightly drained)

Spices

  • ¼ teaspoon cumin
  • ½ teaspoon chili powder

Other

  • 14 ounces tortilla chips (for serving)
  • Non-stick spray (for casserole dish)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the dip.
  2. Prepare dish: Spray a 2-quart casserole dish with non-stick spray to prevent sticking and set it aside.
  3. Mix base ingredients: In a large bowl, combine the softened light cream cheese, sour cream, chopped yellow onion, cumin, and chili powder. Mix thoroughly until the mixture is smooth and blends well together.
  4. Add tomatoes and jalapenos: Stir in the slightly drained canned diced tomatoes with green chilies and the minced jalapenos into the cheese mixture until everything is well incorporated.
  5. Incorporate cheese and spinach: Add the Mexican blend shredded cheese and fresh baby spinach to the mixture. Stir well; the spinach may seem bulky at first but will soften and meld in as you continue mixing.
  6. Transfer to casserole dish: Pour the combined spinach queso mixture into the prepared casserole dish, spreading it evenly.
  7. Bake the dip: Place the casserole dish in the preheated oven and bake uncovered for about 30 minutes or until the dip is hot, bubbly, and slightly golden on top.
  8. Serve: Remove the dip from the oven and serve warm alongside tortilla chips for dipping.

Notes

  • To reduce spice level, remove all jalapeno seeds before mincing.
  • You can substitute the light cream cheese for regular cream cheese for a richer flavor.
  • Fresh spinach can be swapped for frozen chopped spinach, but thaw and drain thoroughly before using.
  • For added texture, sprinkle extra shredded cheese on top before baking.
  • Serve immediately after baking for the best warm and melty experience.
