This Subway Sweet Onion Sauce recipe replicates the iconic tangy and sweet flavor of the beloved Subway condiment. Made from fresh onions, garlic, a blend of vinegars, sugar, and spices, this sauce is perfect for enhancing sandwiches, burgers, or as a flavorful dip. The sauce is cooked on the stovetop to develop its rich, glossy texture and balanced sweetness.

Ingredients

Vegetables

  • 1 medium-size onion
  • 2 garlic cloves

Liquids

  • ¾ cup water
  • ¼ cup water (for slurry)
  • 1 tsp balsamic vinegar
  • 1 tsp white vinegar
  • ½ tsp fresh lemon juice

Dry Ingredients and Spices

  • ⅓ cup granulated sugar
  • ¼ tsp nigella seeds (kalonji)
  • ¼ tsp freshly ground black pepper (or to taste)
  • ¼ tsp salt (or to taste)
  • 2 tsp cornflour (cornstarch)

Instructions

  1. Prepare Onion and Garlic: Peel the onion and garlic cloves, then roughly chop them before blending until smooth. Use a muslin cloth to squeeze out the juice from the blended mixture and transfer the extracted juice into a pan or pot.
  2. Combine Ingredients and Boil: Place the pan on medium heat and add ¾ cup water, sugar, salt, white vinegar, balsamic vinegar, black pepper, and nigella seeds to the onion-garlic juice. Bring the mixture to a boil, stirring occasionally, until the sugar dissolves completely.
  3. Make Cornflour Slurry: In a separate bowl, whisk together ¼ cup water and cornflour thoroughly to create a smooth slurry without lumps.
  4. Thicken the Sauce: Gradually add the cornflour slurry to the boiling mixture while stirring continuously over medium flame. Continue stirring until the sauce thickens and attains a glossy appearance.
  5. Finish and Cool: Remove the pan from heat, stir in fresh lemon juice to enhance the flavor, and allow the sauce to cool to room temperature.
  6. Store: Transfer the sauce to an airtight container and refrigerate. Use as needed to add a sweet and tangy element to your dishes.

Notes

  • Using fresh onion and garlic juice is key to achieving the authentic flavor of Subway’s sweet onion sauce.
  • You can adjust sugar and vinegar quantities to suit your preferred sweetness and tanginess levels.
  • The nigella seeds add a subtle herbal note; if unavailable, you may omit them or substitute with a pinch of cumin seeds.
  • This sauce keeps well refrigerated for up to two weeks.
  • Ensure continuous stirring when adding the cornflour slurry to prevent lumps and ensure even thickening.
