A simple and delicious recipe for perfectly roasted whole chicken with crispy skin and juicy meat, seasoned with Italian herbs and olive oil. Ideal for an easy family meal or a special dinner.

Ingredients

Chicken

  • 1 (4 to 5-pound) whole chicken (packet of giblets removed)

Seasoning

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon Italian seasoning
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat and Prepare: Preheat the oven to 425°F (220°C). Place a baking rack in the lower third of the oven. Bring the whole chicken to room temperature and pat it dry thoroughly with paper towels to ensure crispy skin.
  2. Position and Oil: Place the chicken breast side up in an oven-safe pan, preferably cast iron. Truss the legs by tying them together to ensure even cooking. Drizzle the olive oil over the chicken and rub it evenly all over to coat the skin.
  3. Season: Generously season the chicken with kosher salt, freshly ground black pepper, and Italian seasoning. Use your hands to pat the seasoning into the skin to help it adhere during roasting.
  4. Roast: Place the chicken in the preheated oven and roast for 70 to 90 minutes. Roast until the juices run clear and the meat is cooked through. Use an instant-read thermometer inserted into the thickest part of the thigh; it should read 165°F (74°C) to ensure doneness.
  5. Rest and Serve: Remove the chicken from the oven and transfer it to a cutting board. Let it rest for 15 minutes to allow juices to redistribute. Then carve and serve.

Notes

  • Letting the chicken come to room temperature before roasting helps it cook more evenly.
  • Patting the chicken dry is crucial for crispy skin.
  • Trussing the legs helps the chicken cook uniformly and keeps it looking neat.
  • Use a meat thermometer to avoid under or overcooking.
  • Resting the chicken before slicing prevents dry meat by allowing juices to redistribute.
