Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp neutral oil (such as canola or vegetable oil)
  • 1/2 tsp cinnamon (optional)
  • Salt and pepper, to taste

Ground Beef Mixture

  • 1 lb lean ground beef
  • 1 tbsp tomato paste
  • 2 tbsp taco seasoning

Toppings

  • 2 avocados, cubed or sliced
  • 2 cups cottage cheese
  • 4 tbsp hot honey (adjust to taste)

Instructions

  1. Prepare and Air Fry Sweet Potatoes: Toss the peeled and cubed sweet potatoes with neutral oil, salt, pepper, and cinnamon if using. Arrange them in a single layer in an air fryer basket and air fry at 400°F for 10-15 minutes, shaking the basket halfway through cooking to ensure even browning, until golden and tender.
  2. Cook Ground Beef: While the sweet potatoes cook, heat a large skillet over medium-high heat. Add the ground beef and break it up with a spoon. Stir in the tomato paste and sprinkle the taco seasoning evenly. Continue cooking, stirring occasionally, until the beef is browned and cooked through. Remove from heat.
  3. Assemble the Bowls: Evenly divide the cooked sweet potatoes and seasoned ground beef among four bowls. Top each with a generous scoop of cottage cheese and the cubed or sliced avocado. Finally, drizzle each bowl generously with hot honey to add a spicy-sweet finish. Serve immediately and enjoy!

Notes

  • You can substitute the taco seasoning with your preferred spice mix for different flavor profiles.
  • If you don't have an air fryer, roast the sweet potatoes in the oven at 425°F for 20-25 minutes, tossing halfway through.
  • Adjust the amount of hot honey based on your preferred level of sweetness and spice.
  • Use lean ground beef to reduce fat content, or substitute with ground turkey or plant-based crumbles for a different twist.
  • Cottage cheese adds protein and creaminess; alternatively, Greek yogurt can be used for a tangier option.
